I don’t bake that often but when I do, you know I have cookies on my mind!
These babies are soft and TOTALLY melt in your mouth! It’s like almond butter stuck to the roof of your mouth! Y-U-M! 😉

Only 7 ingredients and 1 bowl required for these! Easy to make and easy clean-up! What’s better than that?
So let's talk about these 1 bowl Chocolate Chip Almond Butter Cookies for a minute.
I used rice flour in them, if you aren’t familiar with rice flour cookies then let me point out that it does give it a more fragile texture but with these cookies I didn’t want them to be chewy I wanted them to absorb and melt in your mouth and the end texture to be sticky like a spoonful of almond butter would be, so rice flour it was. And I don’t want to sound bossy but friends, I am not joking in the recipe when I say let them sit for at least 20-30 minutes because they are fragile! Just resist the urge to pick them up ... RESISTTTT ! Please! Thank you millions! 😉
Next the almond butter in here, I used dry roasted no salt added natural creamy almond butter, I get mine from Trader Joes it has a nice runny consistency which allows it to mix really well but if you use a different brand that is thick and dense make sure you melt it first otherwise it may not mix very well!

Ingredients
- 1 flax egg (1 TBSP ground flax seeds mixed with 3 TBSP water and let sit until thickened and jelly like)
- 1 cup almond butter (I used unsalted natural, ingredients were only almonds)
- ¼ cup maple syrup
- ½ tsp vanilla
- ¼ cup brown rice flour
- 1 tsp baking soda
- 2 TBSP vegan chocolate chips
Instructions
- Pre heat the oven at 350 F
- In a bowl add your flax egg first and let sit a couple minutes until thickened.
- Begin adding the rest of the wet ingredients, almond butter, maple syrup, vanilla and stir.
- Add the rice flour and baking soda next and stir really well.
- Add chocolate chips and fold them in.
- Get a baking sheet, if it’s not a non-stick sheet, spray it with a light coat of non-stick spray.
- Form balls about the size of a golf ball and place them on the cookie sheet, lightly press them down so they are flattened slightly.
- Place in the oven for 15 minutes.
- Let cool at least 20-30 minutes before trying to remove them, they need to sit to get firm, they are too fragile straight from the oven an hour would be even better!
- Makes about 9 cookies
