Some of my favorite things in this world are no bake goodies like my peanut butter cups and chocolate covered peanuts , Chocolate Almond Cluster! Or the super healthy chocolate coconut date balls!!!!
Well these 1 bowl No-Bake Vegan Chocolate Chip Nut Cookies are da bomb my friends! I’ll be honest they are a little picky when trying to form them into cookies but I have notes in the recipe to help ya with that because they are SO worth every last bite! They seriously save me from grabbing chips and much healthier!
The basic idea here is an oat cookie but it’s got flavor and texture added with the almonds, almond butter, chocolate chips and sesame seeds!
Yes sesame seeds! Why you ask?
Why not? HA just kidding I’ll tell you why…
They have a ton of health benefits and I feel like I am the last person in the world to realize this!!! So I had to include them!!!
A few of the benefits:
They have a thing called Oleic acid in them which helps to lower your LDL “bad cholesterol” and increases you HDL “good cholesterol”
They have compounds that fight free radicals in our bodies.
They have protein.
A bunch of B vitamins in them.
They also contain Folic acid, and essential minerals calcium, iron, manganese, zinc, magnesium, selenium and copper.
Like seriously why not add these little guys to everything?! Did you know they were such a superfood??? You are definitely going to be seeing them in more of the recipes on here because they are just too healthy to not add them!

1 Bowl No Bake Chocolate Chip Nut Cookies
You only need 1 bowl and 8 ingredients to make these 1 bowl No-Bake Vegan Chocolate Chip Nut Cookies! They are super quick and easy and perfect for a snack or breakfast! Chewy texture with a nutty flavor! Vegan and Gluten Free.

Ingredients
- DRY INGREDIENTS:
- 1 cup rolled oats
- 2 tbsp vegan chocolate chips
- 2 tbsp sesame seeds
- 2 tbsp chopped almond (I used roasted and lightly salted ones) slivered almonds would work too
- 1tbsp almond meal/flour
- WET INGREDIENTS:
- 4 tbsp maple syrup (reserve 1 tbsp for last, see directions)
- ⅓ cup all natural almond butter
- ½ tsp vanilla
Instructions
- Add all dry ingredients into a large mixing bowl.
- Add all wet ingredients right into the dry ingredients EXCEPT RESERVE 1 tablespoon OF THE MAPLE SYRUP!
- Mix the really well, THEN add the last 1 tablespoon of maple syrup to the mixture to make it sticky and less dry.
- Line a cookie sheet with wax or parchment paper, scoop out a handful or golf ball size amount of mixture into your hand, SQUEEZE the mixture really hard a couple times to get it packed together! Using one hand works best. Then push it to flatten into a cookie shape and place on the cookie sheet. Repeat until mixture is gone. Place in the freezer for 30 minutes and then remove and enjoy! Store in the fridge up to 5-7 days.
Notes
This mixture is really crumbly when trying to form the cookie shapes, a couple tips would be to spray your hands with non-stick spray OR lightly wet them with water when your hand get too sticky… when you place a scoop in your hands squeeze it first to get it packed together then begin trying to form them…if you simply can non manage to get the cookie shape formed feel free to add 1 more tbsp. of maple syrup to make it stickier! If you add more maple syrup it may need to stay in the freezer a little longer to set.
