And the best part is how EASY they are to make!
Literally throwing the 3 ingredients into a food processor and pulsing until done!
I have been addicted to these lately; it’s just like rawnola but better because it tastes like a blueberry muffin!
You may remember my chocolate coconut date balls from like… a long time ago! Okay maybe it’s only been like a year or so but it seems like forever ago!
SO many people liked them I can’t believe it has taken me this long to do another version of them! 😉
And let me tell you, this version totally does not disappoint at all!
Let’s talk about the freeze dried blueberries in here.
I got them from Whole Foods, I’m sure other places have them also but that’s just where I got mine.
They are NOT the dried fruit kind… ya know like dried cranberries…nope! They are freeze dried, so they are like … light and airy puffy little dry blueberries!
They were in the section right next to the dried fruit but again freeze dried! 😉

Super quick and easy 3 ingredient blueberry muffin energy balls! These are little bliss bites of joy! Healthy, Vegan and Gluten Free! refined sugar free!

Ingredients
- ¾ cup oats
- ¾ freeze dried blueberries (I get mine from Whole Foods)
- 8-9 pitted medjool dates (I used 8 and I soaked them in water for 2 hrs first to soften them)
- Optional: Unsweetened shredded coconut OR cocoa powder for rolling in.
Instructions
- Place everything in a food processor and blend until it forms a sticky texture, may need to scrape sides down a few times.
- rolls into balls and store them in the fridge up to 1 week!
- Makes 8-12 balls depending on how big of balls you make!
Healthy never tasted SO gooood! 😉
