This 30 Minute Easy Broccoli Grape Pasta Salad is so quick and easy to prepare. Only takes 30 minutes and perfect for lunch, dinner, parties, or pic nicks. Vegan and Gluten free Option.
Okay! So this is SO super dooper crazy simple to prepare and I don’t know about you but I love simple pasta salads especially when the weather starts to warm up, I like to switch to cold pasta salads and this 30 Minute Easy Broccoli Grape Pasta Salad is totally on point!
There is only 10 ingredients in total including the dressing! It only takes about 30 minutes to toss together and it has lots of flavor and texture!
In case you didn't realize I LOVE pasta salads and I also Love to put grapes in them. 😉 (see this apple grape pasta salad from a couple weeks ago!) I think they work really well in pasta dishes and add A LOT of flavor!
Let’s start with the pasta, use any kind you want GF is you like!
The add-in’s broccoli, onion, grapes and almonds!
The broccoli is a superfood and every dish needs some kind of superfood right? The grapes give a nice juicy sweet punch when you bit into them! And the almonds provide a salty crunch! (I used lightly salted almonds)
The broccoli and onions I steamed together in a pot while the pasta was cooking just to soften the broccoli a little bit because to be honest I don’t really love raw broccoli… I’ll eat it on occasion with a dip but not very often!
That step is not 100% necessary if you like raw broccoli, but it really does make it taste better in my opinion! 😉
I mean doesn’t all that sound mouthwatering!? And I haven’t even said anything about the dressing yet!
Okay so you want to know about the dressing right? …
It’s vegan mayo (I use a brand from Whole Foods called: Vegenaise by Follow Your Heart ) BUT not just plain ol’ mayo I seasoned it with a squeeze of lemon, fresh pepper, chili and onion powder! If you have never tried seasoning your mayo then my friends, you are missing out BIG TIME!
One more thing, the way to make this done in only 30 minutes is to be efficient with your time! In the recipe I wrote out exactly what to do and when to do it, if you follow the order I have listed then you will totally be on point with the 30 minute mark!
Basically you are prepping the whole 30 minutes.
Follow the order and you’ll be good to go! 😉
So if you try this, will you take a pic and show me on social media please?! I really love connecting with you all! And let me know what you think if you try it!
I hope you give this a try and let me know what you think! let's keep in touch too on TwoRaspberries, Facebook, Twitter, and Pinterest!
