We can’t have December without a couple baked goodies right?! I have a couple comin at ya’ this month and today it’s these super simple 5 Ingredient Chocolate Chip Almond Butter Oat Cookies!!!
The best part? You know how gluten free cookies are really fragile a lot of the time? NOT THESE!!! They are made with oat flour and let me tell you, the texture and firm-ness of these almond butter cookies is ahhh-mazing!
I think you are really going to love them, they only have 5 simple ingredients and these oat cookies are really easy to make!

I did a little research about Almond Butter and found out it is great your heart because it’s rich in monounsaturated fats which help reduce the levels of cholesterol! It’s also great for helping lower blood pressure because it decreases the cholesterol. It helps to control blood sugar , and is rich in antioxidants! So we are totally winning with this chocolate chip almond butter cookie!
For the almond butter be sure it’s REAL natural almond butter with the only ingredients being almonds, raw is obviously the best choice but roasted is still a good alternative. The almond butter should be a runny consistency if it only has almonds as the ingredients! (a little salt is also fine if that is listed, just no nasty preservatives)

Oats! Heart healthy + fiber filled oats are used two ways in this cookie, in their rolled oat form and also popped into the food processor to be turned into flour! This oat flour gives this cookie a really nice firm texture and helps it hold together really well!
Pure maple syrup is the sweetener I used in this chocolate chip cookie it works great and provides just the right amount of sweet-ness. Be sure to look at the ingredients and make sure it’s pure and not loaded with HFCS! 😉
Lastly you can’t have a chocolate chip cookie without the chocolate! I like to use Enjoy Life dark chocolate chips in here but you can sub carob chips if you want to avoid the little amount of sugar or caffeine in chocolate!

5 Ingredient Chocolate Chip Almond Butter Oat Cookies are super easy to make, only require 1 bowl and they are vegan plus gluten free!
- Prep Time: 10 mins
- Cook Time: 16 mins
- Total Time: 26 mins
- Yield: 6-8 1x

Ingredients
- ½ cup all natural runny almond butter
- ¼ cup pure maple syrup
- 2 TBSP oats
- ½ cup oats processed into a flour
- ½ tsp baking soda
- ⅓ cup vegan chocolate chips (I used Enjoy Life dark chocolate ones)
Instructions
- Pre-heat the oven to 350 degrees F and line a baking sheet with parchment paper.
- in a food processor add the ½ cup of oats and process until it turns into flour consistency.
- Add all the ingredients into a large bowl (except the chocolate chips) and mix until well combined!
- Fold in chocolate chips.
- Form balls and place them on the baking sheet, lightly push them down so they are not round but do not flatten them completely.
- Bake for 16 minutes and then let cool completely on the baking sheet for at least 20 minutes!
- Makes 6-8 cookies
- store in a sealed container for 2 days
