This 5 Ingredient Healthy Vegan Microwave Brownie is also gluten free and refined sugar free! And takes only about 5 minutes or LESS to make!
So with this recipe you can totally double the batch if you are making this for two people and either put them in 2 different ramekins (microwave safe!) OR you can put it in just one ramekin and share it 😉 BUT if you do this you will probably need to microwave it a little longer closer to 1.45-2 minutes for a double batch in one dish! (think date night dessert? Maybe make this curry quinoa or this Cheesy pasta and have these brownies for dessert??? Just a thought!) 😉

5 Ingredient Healthy Vegan Microwave Brownie
- Prep Time: 2 mins
- Cook Time: 2 mins
- Total Time: 4 mins
- Yield: 1 1x

Ingredients
- 2 TBSP almond meal (I use Bob’s Red Mill brand)
- 1 ½ TBSP unsweetened cocoa powder
- ½ tsp baking powder
- 1 TBSP maple syrup
- 2 ½ TBSP unsweetened vanilla almond milk (I use SILK brand)
- OPTIONAL TOPPINGS:
- Chopped pecans
- Chocolate chips
- Raspberries or fruit
- Shredded coconut
- Melted PB
- CASHEW VANILLA VEGAN ICE CREAM!!!
Instructions
- Place all ingredients in a small microwave safe bowl and mix really well.
- Pop in microwave for 1 min and 15 seconds, carefully remove (use a rag or pot holders because it will be really HOT) top with anything you like and enjoy!
- This recipe makes 1 single serving brownie!
Notes
You can double the recipe and pour in two separate microwave safe dishes OR make 1 bigger brownie and place all in 1 dish BUT will need to microwave longer closer to 2 minutes when doubling the recipe and cooking as one in one dish!
