I 100% adore breakfast bowls that are easy but also ones that you can meal prep! You can make a couple batches of this and store it in the fridge up to 4 days and it’s just as delicious on day 4 as it was on the first day!
You don’t even have to have this as breakfast I have had this plenty of times for lunch because the oats and chia seed really make this a filling bowl and the sweetness of the fruit is very satisfying.
One thing to note on this power breakfast bowl:
I soaked my chia seeds and oats overnight because it’s much easier to digest when they have been hydrated prior to eating them!
The rest is pretty straight forward, mix and match the fruit and add nuts and other seeds if you would like! (I recommend soaking the nuts and seeds as well.

Ingredients
1 cup of vegan coconut yogurt (unsweetened plain vanilla)
1 TBSP chia seeds (soaked overnight)
¼ cup rolled oats (soaked overnight)
Sliced strawberries
1 TBSP pure maple syrup
Optional:
Other fruit (bananas, berries, mango, kiwi)
nuts/seeds
Cacao nibs
Shredded coconut
Instructions
- Soak the chia seeds and oats overnight. (better for digestion to hydrate them)
- Pour the yogurt into a large bowl and add the rest of the ingredients on top!
- ENJOY!
