This is the tastiest quinoa salad bowl ever! I think you are going to love how simple and FAST it is to make!
Different versions of this are definitely one of my go-to’s when I need to have lunch pre-ready for the next day, they also taste great cold! That makes them perfect to pack for lunch.
Sometimes I prepare my quinoa in water especially when I plan to store it in the fridge and use it for something like my 5 ingredient superfood blueberry breakfast bowl but when I am in the mood for more of a filling + tasty lunch/dinner food I opt for cooking my quinoa (or rice) in low sodium vegetable broth.
I get my low sodium vegetable broth from Trader Joe’s it has perfect flavor with a little kick to it so I don’t even need to add any additional seasonings to it!
To make this 5 Ingredient Superfood Quinoa Salad Bowl you start my cooking the quinoa, while it’s cooking you prepare the rest of the ingredients. Make a bed of lettuce in your bowl or to-go container and then you can add the cooked quinoa on top with the carrots and avocado!
A squeeze of lemon and sprinkle of pepper is optional it just add a little moisture and fresh-ness to the salad!
The savory taste of the quinoa cooked in veggie broth combined with the fresh salad and creamy avocado is the perfect match for the little crunch from the carrots! I think you will love it and feel free to switch or add your personal favorite veggies to this! 😉

Ingredients
- 1 cup mixed color quinoa (could sub rice)
- 2 cups low sodium vegetable broth
- ¼ - ½ and avocado
- 2-3 handfuls spring mix lettuce
- ⅓ – ½ cup Shredded or sliced carrots
- OPTIONAL:
- Fresh pepper sprinkled over top
- Slice of lemon squeezed over salad
Instructions
- Start by preparing the quinoa, always wash the quiona (or rice) first and then.
- The vegetable broth is going to be the liquid you cook the quinoa in, so follow instructions on the package for your quinoa, I just put the veggie broth and quinoa in a pan and bring it to a boil, then reduce to low heat and put a lid on and let simmer until cooked which is about 15-20 minutes.
- While it is cooking start by chopping or slicing the carrots and the avocado.
- Add the lettuce, avocado, carrots to a bowl, once quinoa is done add it to the bowl as well. You can be done and enjoy! Or you can sprinkle a little pepper and lemon juice over the top!
