Best Ever Cinnabun Cookies OMG you guys this is like a cinnamon roll but in the form of a cookie!!! so excited you'r going to love these!!!Â
these are amazing! if you love cinnamon rolls but your also a cookie lover like me then here I give you the best of both worlds!!!
SO remember last week I said I had a recipe waiting till it was closer to the Holiday season....
here it is!... I actually made it on Halloween day as a way to keep myself from eating any of the Halloween candy... this was my first Halloween since going mostly vegan SO I made these instead to keep my hands out of the Halloween basket!
anyways ...ya know when you walk by the Cinnabun place at the mall and immediately your hungry for a cinnamon roll?
hehehe wellllll although I completely love cinnamon rolls (a lot) there is just something about cookies that I JUST NEVER GET SICK OF THEM!
cookies are my thing, ALL kinds of them...crunchy, soft, gooey, moist all of them 😉
SO let me introduce you to my Cinnabun Cookie!!!
About these pretty lil things in your face right now...
these cookies are sweet and savory and super sugary from the frosting!
these are perfect for someone with a huge sweet tooth and a love for all things cinnamon and sugar!
they are super pretty which makes them perfect for the upcoming holiday season and if you ask me they just scream holiday cookie 😉
BONUS: your house will smell like the Cinnabun shop! no-joke amazing!
as you can see from the picture below they are thick puffy cookies not flat or tiny... they are filled with so much flavor and you know your going to want to make these!
to me the best flavors for the holidays are cinnamon sugar and pumpkin spice (if you love pumpkin spice check out my chocolate chip Pumpkin Spice Cookies OR my Pumpkin Spice Breakfast Cookies) anddd let me add ginger snap cookie to that list... I need to make some of those still 😉
I have two different options to make the frosting listed in the recipe and shown in the pictures....one is more a snow capped frosted look and the other one is a sandy colored frosting, both are de-lish!

Best Ever Cinnabun Cookies Vegan Gluten Free Soy Free
- Prep Time: 40 mins
- Cook Time: 15 mins
- Total Time: 55 mins
- Yield: 15 1x
Ingredients
- cookies:
- 1 ½ sticks of vegan melted butter (6oz/ 12 TBSP) (I use earth balance)
- ½ cup of sugar
- ½ cup plus 1 ½ tablespoon packed brown sugar
- â…“ cup pumpkin puree (plain not pie filling)
- ¾ tsp hot water
- 1 tsp vanilla
- 2 ¼ cups plus 3 tablespoon all purpose GF flour
- ¾ tsp salt
- ½ tsp baking powder
- ½ tsp baking soda
- ¾ tsp cinnamon
- for the frosting
- ½ stick of vegan butter
- 1 ½ tsp vanilla
- pinch of salt
- 3 tbsp vanilla almond milk
- 3 cups confectioners sugar
- sprinkle:
- ½ tbsp cinnamon
- 2 ½ tbsp sugar
- 2 ½ tbsp brown sugar
Instructions
- pre heat the oven at 370 degrees
- in a large bowl add you butter and pop in the microwave to melt is (approx 45-60 seconds)
- next add your sugar, brown sugar, pumpkin, water, vanilla and mix everything well
- then add your flour, salt, baking powder, baking soda and cinnamon and mix until everything is smooth (this won't be a very thick batter it will be a bit runnier than a usual cookie dough)
- place in the fridge for at least 30 minutes
- remove from fridge and form balls about 2 ½ tablespoon each (these are large cookies)
- place in the oven for 14-15 minutes
- while the cookies are in the oven make your frosting:
- in a large bowl add your butter and melt it in the microwave
- next add your vanilla, salt, almond milk and mix
- add in your confectioners sugar and stir with a spoon folding everything together carefully
- once stirred and mixed well get out your hand mixer and and mix the frosting for 2-3 minutes
- set aside and mix your sprinkles
- sprinkles
- in a small bowl add you cinnamon, sugar, and brown sugar and stir well
- once the cookies are done let them cool for about 10 minutes and then use a spatula and spread your frosting and sprinkles on the cookie and let sit and hour or so to let the frosting set!
- Optional:
- if you would like to add the sprinkles to the frosting that is also an option... I have both ways pictures above!

Notes
for GF flour I used Bob's Red Mill GF flour blend in the RED PACKAGE! (NOT the blue package baking blend)
if you are not going to use GF flour then you will probably only need to use 1 ½ to 1 ¾ cups of regular white flour

Michele, these look to die for! The frosting on top is calling my name.
