Ooo your about to fall in love!!! Chocolaty, Fudgy, Healthy-ness???
Yeah you read it correctly, I said fudgy in the same sentence as healthy!...
ok it’s not like they are eat the whole batch of 36 balls healthy but they are sooo much healthier than a candy bar and a million times more satisfying!!!
I can’t even describe to you how amazing these are… I mean if it’s “that time of the month” and you need a chocolate fix (lets be real here, men have “that time also” they need a chocolate fix just as much as we do) but anyways… maybe it’s not “that time” and your like me and you need atleast a piece of chocolate daily! Oooo these will light up you day!
So lets start with the cake, its make with rice and oat flour that’s what makes it Gluten Free… (this recipe is only Gluten Free if you choose chocolate chips that are Gluten Free)
The cake itself is moist and soft and fudgy like a brownie with the texture of a cake, then when you crumble it and mix in the chocolate it takes it to a wholeee new level of amazing-ness!!! It’s like un-comparable to any candy bar… ok so your telling me you’re a snickers fan and there’s no peanuts in these how could it be as great… trust me it is! But if you totally need the peanuts chop some up very small and add it to the mixtued right before you roll them into balls… what about the caramel… mix in some melted caramel flavor chocolate chips!
But trust me, if you just try these the way the recipe is written below you aren’t gonna miss anything… you will go straight into a trance of mmmm omg this is so good!

p.s. try it with a raspberries! the chocolate and sweetness from the fruit is like totally completely unbelievably mouthwatering!

Best Ever Healthy Chocolate Cake Balls

Ingredients
- - ¾ cups Oat flour (see notes)
- - ¾ cup white rice flour
- - 1 cup sugar
- - ½ cup unsweetened cocoa powder ( I used Ghirardelli)
- - 1 teaspoon baking soda
- - ½ teaspoon salt
- - 1 cup warm water
- - 2 tablespoon criso canola oil or vegetable oil
- - 1 teaspoon apple juice
- - 1 teaspoon vanilla extract
- - 1 bag of vegan chocolate chips
Instructions
- Pre-heat oven at 350
- In a large bowl mix flour, sugar, cocoa powder, baking soda, and salt.
- Add water, oil, apple juice and vanilla and mix really well
- Use cooking spray and spray a pan (I used a 9x5 pan) and pour batter into the pan
- Place in oven for 40 minutes (then carefully stick a toothpick in and make sure it’s fully cooked)
- Once the cake is done let it cool for atleast 20 minutes.
- Get a large bowl and crumble the cake into the bowl (don’t worry the cake will actually crumble for you, it is supposed to)
- In a medium bowl melt the whole bag of chocolate chips
- Pour the chocolate into the bowl of crumbled cake and mix it together really well
- Rolls into bite size balls and store in fridge for up to 1 week or freezer up to 2 weeks (if in freezer let thaw for 1 hr in fridge before eating)
- Optional: before refrigerating you can roll the balls in confectioners’ sugar, cocoa powder or even melt chocolate like white chocolate chips to dip them in.
- ***Extremely good if you pop one of these in your mouth with a raspberry!
