    ooo I just got a waffle maker so be ready for some waffles recipe!!!

     these Best Ever Pumpkin Spiced Waffles  are Vegan Gluten Free and Soy Free 

    totally soft inside with a crispy outside!

    Have I ever mentioned how much I love waffles BUT never bought a waffle iron...until NOW!  I really don't know why it took me this long to get one because let me tell you, they are SO much tastier homemade!

    plus you can customize the recipes so easily it's just an amazing  lil appliance! and I love it!

    So lemme tell ya a little about this "Best Ever Pumpkin Spiced Waffle" ... it's like amazing and gonna knock your sox of!

    the center is soft and fluffy like it should be and the outside is crispy and the combo together is GREAT! But I can't forget about the flavor... it's ... Pumpkin Spice! surprise! ... I know not really a surprise since Pumpkin Spice is kinda the thang right now, cause of the time of year and all, I couldn't resist  😉

    I bet bet you won't be able to resist this waffle either... well if ya tasted it you would definitely be eating the WHOLE thing... or maybe two?! how hungry are ya?

    anyways seriously go try this recipe I promise your going to fall in love, and if you don't have a waffle iron go get one... mine was super cheap from target and it works great!

    Best Ever Pumpkin Spiced Waffles Vegan GF Soy Free

    Ingredients

    Scale
    • 1 ¼ cup vanilla almond milk PLUS 1 teaspoon white vinegar
    • 2 ¼ cups all purpose GF flour
    • 1 ½ tsp baking powder
    • pinch of salt
    • 1 ½ tsp sugar
    • 1 to 1 ½ tablespoon pumpkin spice (depending on how strong you want it)
    • ¼ cup olive oil
    • ¼ cup maple syrup
    • 1 tsp vanilla
    • optional mix in:
    • chopped vegan chocolate chips
    • topping suggestions:
    • banana for topping or fruit of choice
    • maple syrup for topping
    • vegan butter for topping

    Instructions

    1. first turn your waffle iron on so it can heat up, I put mine on high heat but read your waffle iron instructions because they all differ
    2. next in a small bowl put your almond milk and vinegar and stir, let sit while mixing other ingredients
    3. in a large bowl add you GF flour, bakind powder, salt, sugar, pumpkin spice and mix it all together
    4. then add you olive oil, maple syrup, and vanilla and mix
    5. add you almond milk and vinegar mixture and stir just until no lumps are in the batter, try not to over mix the batter
    6. transfer into a cup so it's easy to pour into the waffle iron
    7. cook according to your waffle iron instructions
    8. enjoy

    Notes

    these freeze really great, so make extra!

      I love waffles, Michele! Glad you finally got an iron. My brother always makes pumpkin waffles on Thanksgiving morning and it's the perfect way to kick off the day. I'm going to try this version on my gluten-intolerant husband!

      It wasn't that long ago that I overhauled my diet completely and gave up things like waffles......because Bisquit isn't that good for you. But waffles like these, I can do these without feeling bad about my diet. What a great Saturday morning breakfast, especially with the fresh fruit on top. Although I might get a little heavy handed with that pumpkin spice!

      I have been wanting to have a waffle maker for so long but I keep pushing it simply because I live in an apartment and I have already stuffed my kitchen with my baking equipment and ingredients, I don't know where will I keep it! Anyway these waffles look great Michele! Perfect brunch for the weekend especially during fall. I bet they tasted great!
