I have such a thing for COOKIESSS!!! These are a re-make modified version of my ones from last year, those Chocolate Chip Pumpkin Spice Cookies were smaller and more chewy, these ones are BIGGER! And Softer! 😉 (although I love both but I couldn't do the same ones again!)
anyways, do you love the clean crisp smell of fall? And the smell of spices baking in your oven? Meee tooo! 😉 I'm so happy we're on the same page! Must be why we are such good friends!

Big Chocolate Chip Pumpkin Spice Cookies
Big Chocolate Chip Pumpkin Spice Cookies

Ingredients
- Dry:
- 2 ⅓ cups all purpose unbleached flour
- Pinch of sea salt
- 1 tsp baking soda
- ½ tsp baking powder
- 1 ½ tsp cinnamon
- 1 ½ tsp all spice
- ½ tsp nutmeg
- ½ tsp clove
- ¾ cup vegan chocolate chips (I use Enjoy Life brand)
- Wet:
- ½ cup melted vegan butter (I use Earth Balance in the red tub)
- ¾ cup vegan cane sugar
- ⅓ cup packed brown sugar
- ⅓ cup pumpkin purée (NOT pie filling! use the plain stuff)
- 1 tsp vanilla
- 1 tsp hot water
Instructions
- In a large mixing bowl add your butter and microwave until melted, then add you sugar, brown sugar, pumpkin, vanilla, hot water and mix all your dry ingredients together
- Add you dry ingredients, flour , baking soda, baking powder, salt, and spices.
- Mix everything together really well and then fold in chocolate chips
- Place I fridge for 20 minutes just so it's easier to form balls and pre-heat the oven to 370 degrees
- Use a non-stick cookie sheet or spray one with non-stick spray and form large balls about the size of a golf ball and place them on the cookie sheet AND smash them down into a large cookie shape!
- Bake for 15-17 minutes
- Makes about 15 cookies depending on size

I am making these now. I got your recipe from One Green Planet. That recipe says 2 1/2 C flour and yours here says 2 1/3. Other than that they look the same. I followed the one from OGP. My batter is dry as can be. The only thing I did differently is I used raw coconut butter instead of Vegan Butter but I melted it first. I'm going to try adding more pumpkin puree so hopefully these aren't a total loss. They sound delicious!

Hi Liss! thanks for letting me know they have the recipe written wrong I will have to email them 😉 and I have never used raw coconut butter so I am unfamiliar with it... If you were using the vegan butter (which is oil based) I would actually have suggested you add a little more butter to the recipe as sometimes pumpkin can be very picky and make the cookie more crumbly...but with the raw coconut butter I'm not sure about it... I hope you were able to salvage the dough though :-/ because these are very delicious! and I will email One Green Planet today and have them fix that! sorry about this, I hope you try them again because they are totally worth it! 😉 have a wonderful day!

Hi Michele, thank you for your reply. I added another 1/3 C + 1T pumpkin purée and the batter looked like cookie batter so I baked 'em up! They are more like pumpkin bread but very good. Next time I'll try with vegan butter...I love good cookies. Thanks for the recipe.
