Salsa on a wholeeee new level today my friends!
It’s sweet and spicy, fresh and chunky and totally delicious with chips, a salad topping, a rice dish topping or as a taco topping! 😉 I mean it’s de-lish on everythanggg!
This is definitely a summer salsa that you are going to want to serve at all of your upcoming get together/parties!
I know some of you might be thinking chili and fruit??? Or... fruit on my rice? or on my chips? Whaaaa???
But just trust me on this, it will surprise you!
Let’s talk about the simplicity for a minute.
I used canned pineapple chunks and chopped them a little smaller. I bought organic canned that had ingredients of pineapple and pineapple juice only no other preservatives!
I choose canned because the texture is a little softer and goes better with the mango, fresh would work well too but I just think the texture is a little too hard in my opinion.
The mango! Make sure it’s ripe because the sweetness adds a lot! Chop it in tiny chunks about the size of the pineapple.
Chop the onion very small also.
Cilantro, chop it of just ripe it into tiny pieces whatever works best for you!
The lemon and lime juice is just a tiny amount! Just a small sliced squeezed.
A little bit of chili powder gives a nice KICK of heat and flavor!
Literally just chop, add to a bowl, quick stir and good to go!
You can totally double or triple the recipe if you are going to serve it as a chip dip instead of a topping!

Ingredients
- ½ cup of chopped pineapple (I used organic from a can)
- 1 fresh small mango chopped
- ¼ cup finely chopped purple onion
- 1 tsp lemon juice (fresh squeezed)
- 1 tsp lime juice (fresh squeezed)
- ¼- ½ teaspoon chili powder (depending how spicy you want it)
- 1-2 teaspoon chopped fresh cilantro
- Optional: can add ¼ cup red pepper chopped if you would like to.
Instructions
- Chop all ingredients and add right into a bowl, stir up and done!
- Makes about 1 cup.
