So I took that Chocolate Birthday Cupcakes recipe that we made and turned it into the cutest little bites of joy!
I have always had a sweet spot for those little bite sized pieces of cake, I mean I used to get one almost every day from Starbucks (before I was vegan, it’s been about 12 years vegetarian and about 4 years vegan) but have yet to make a vegan version…why? I have no idea because they are so dang amazing!!!
I think it’s safe to say this is my newest sweet indulgent treat at the moment….
How to make these cake bites:
Simply make the Chocolate Birthday Cupcakes (in a rectangle cake pan works just fine, no need to make actual cupcakes) once it is baked and cooled crumble it up in a large bowl, add the frosting, mix it up and form balls!
Freeze to set, drizzle with chocolate and sprinkles, freeze one more time to set and ENJOY this bites of fudgy good-ness!

Chocolate Birthday Cake Bites

Ingredients
Make 1 batch of these Chocolate Birthday Cupcakes // see directions below
½ cup vegan chocolate chips melted (I use Enjoy Life Brand)
FROSTING // I used Wholesome Brand Chocolate Frosting
SPRINKLES // I used Fancy Sprinkles brand from their vegan collection.
Instructions
Pre-heat the oven to 350˚ F
1. Make the Chocolate Birthday Cupcakes but you can pour batter into an 8x8 pan and bake until tooth pick comes out clean 24-30 minutes instead of making cupcakes.
2. Once baked and cooled (at least 30 minutes) crumble the cake into a bowl and make sure it’s all crumbled up, add ¾ of the 12.5 oz container of frosting and mix well.
3. It should be moist enough to roll into balls, if not add a little more frosting and roll them into balls and place on a wax/parchment paper lined baking sheet and place in the freezer for 30 minutes to set.
4. Melt the vegan chocolate chips and dip or drizzle each ball with chocolate, sprinkle with the sprinkles and place in freezer 15 more minutes to set and store in the fridge or freezer.
