Birthday cupcakes my friends…. CHOCOLATE ones to be specific… topped with super fun birthday night sprinkles! (I found some vegan ones from FANCY SPRINKLES, not all of them are vegan but they have “vegan” tab to click on to check them all out)
Anyways… no one would ever notice these are vegan I promise you that, they are so moist perfect! Actually I would say these are better than any “regular” non-vegan ones I have ever had even though its been yearsss since I have had a non-vegan cupcake (about 12’ish years) I”m pretty confident in these gems right here.
These are the perfect birthday cupcakes to bring to a party or serve at your Childs party who either can't have dairy or is vegan and none of the other kids would even notice they're vegan!

Chocolate Birthday Cupcakes
These Chocolate Birthday Cupcakes are the best, soft + moist, indulgent cupcakes ever! Vegan and sweet, easy to make and topped with fun sprinkles.

Ingredients
DRY INGREDIENTS:
- 1 ¼ cups unbleached all purpose flour
- Pinch of sea salt
- ½ cup plain unsweetened cocoa powder
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ⅓-½ cup vegan chocolate chips
WET INGREDIENTS:
- ¼ cup melted vegan butter // I use Earth Balance in the red tub
- ½ cup non-dairy milk // I use SILK Almond
- ¼ cup packed brown sugar
- ¾ cup vegan cane sugar
- 1 tsp vanilla
- ½ cup unsweetened natural apple sauce
FROSTING // I used Wholesome Brand Chocolate Frosting
SPRINKLES // I used Fancy Sprinkles brand from their vegan collection.
Cupcake liners or parchment paper cut out squares
Instructions
Pre-heat the oven to 350˚ F
Line a cupcake pan with cupcake liners
1. In a large mixing bowl add all of your dry ingredients and mix well.
2. In a separate small bowl melt the butter in the microwave, add melted butter and all the rest of the wet ingredients to the dry mixture and mix.
3. Pour batter into lined muffin pan and bake for 24 minutes, remove and let cool completely! At least 30 minutes.
4. Frost and sprinkle those cupcakes up!
Notes
Store in a sealed container for 3-5 days.
