Seriously though, if you love chocolate or cake or brownies or all of the above then you will LOVE these cake bars!
A few things to LOVE about these Chocolate Cake Bars:
- They are super soft and light like a chocolate birthday cake
- Moist and rich like a brownie
- Amazing the first day but even better the next day!
- Easy, only requires 1 bowl and VEGAN obviously.
A Couple Tips when making these:
- do not over bake them, you want to keep a nice moist inside so using a tooth pick you want to poke the center and make sure it comes out 85% clean, you want some gooey on it because they will continue to bake once you remove them from the oven.
- cocoa powder, it must be unsweetened and plain, no added thing to it.
- dust the cocoa powder on the top once they have cooled, if you do it while they are hot it will melt into the cake bars and look funny!

Ingredients
WET INGREDIENTS:
¼ cup melted vegan butter (I use Earth Balance in the red tub)
½ cup non-dairy milk (I like SILK Almond)
¼ cup brown sugar
¾ cup Vegan cane sugar
1 tsp vanilla
½ cup unsweetened plain apple sauce
Pinch of sea salt
DRY INGREDIENTS:
1 ¼ cup unbleached all purpose flour
½ cup plain unsweetened cocoa powder
1 ½ tsp baking powder ¼ teaspoon baking soda
½ cup vegan mini chocolate chips
Instructions
Pre-heat the oven to 350˚ F and line a 8x8 baking dish with parchment paper
- In a large mixing bowl add the vegan butter and melt it in the microwave, once melted mix in the rest of the wet ingredients.
- Add the dry ingredients to the wet ingredients and mix well, add the chocolate chips very last and stir in.
- Bake for 33 minutes until you poke a tooth pik in the center and it comes out clean!
