Super quick and easy, 6 ingredient vegan Chocolate Caramel Cups! No baking required for this chocolaty gooey caramel treat!!
You are SO going to love these Chocolate Caramel Cups! They are insane I don’t know which I love more between these and my favorite Chocolate PB Cups that I have been making for yearsss and stashing in the freezer for late night cravings… such a hard decision because these are incredible and a good switch!
The super simple ingredients in these Chocolate Caramel Cups:
- vegan chocolate chips (I used Enjoy Life brand but feel free to use your favorite vegan chocolate)
- The Best Caramel Sauce which only has 5 simple ingredients of medjool dates, maple syrup, cashew butter, sea salt and coconut oil… it’s gooey and sticky just like caramel should be, it’s naturally sweet and completely decadent!
A few more things about these Chocolate Caramel Cups:
Make a double or a triple batch because TRUST ME you are definitely gonna wanna store a batch in the freezer because they are the BEST for late night sweet cravings.
You can store them in the fridge and they won’t be so frozen but honestly I like mine frozen because it takes longer to melt in your mouth and you can just savory every last bit of it’s indulgence and most likely will be satisfied with less!

Chocolate Caramel Cups

Instructions
- Make the “Best Caramel Sauce” (see notes)
- Melt the chocolate chips
- Use mini candy liners and put a layer of chocolate on the bottom and freeze for 5 minutes, put a dollop of caramel sauce in the center and top with chocolate, place back in freezer to set.
Notes
Store in the freezer for 1-2 months if you like your chocolate frozen and cold like me! Or store in the fridge up to 1 week.
the “Best Caramel Sauce” recipe makes 14 oz. pf caramel, obviously way too much for this recipe, I would suggest making half the caramel recipe or making the whole batch and doubling this caramel cup recipe, and using more caramel for this Soft Chocolate Chunk Caramel Cookie recipe, use more for topping on some vegan ice cream or banana ice cream!
