This easy homemade vegan Chocolate Chunk Peanut Butter Oat Cookie tastes like a granola bar meets peanut butter cup in the form of a delicious cookie!

TIPS for making: do not skip the 1 hour in the fridge and removing 5 minutes before baking, the dough needs to be pretty cold when it goes into the oven this helps it keep it’s shape and bake evenly.
Customization: mix in anything else you want, vegan m&m’s, chopped nuts, fold in some of my best caramel sauce!Â
Additional notes:
Let them COOL COMPLETELY on the lined baking sheet before touching them! They will fall apart if you don’t let the sit and finish setting.

Ingredients
WET INGREDIENTS:
3 TBSP non dairy milk (I use SILK unsweetened almond)
â…“ cup vegan cane sugar
½ cup packed brown sugar
â…“ cup softened room temp vegan butter (I use Earth Balance in the red pkg)
1 tsp vanilla
DRY INGREDIENTS:
1 ½ cup unbleached all purpose flour
Pinch of sea salt
½ tsp baking soda
¾ cups rolled oats
MIX INS:
4 TBSP natural creamy PB
½-¾ cup vegan chocolate chunk/chips or chopped chocolate bar (I like to use a mixture)
Instructions
Pre-heat the oven to 370Ëš FÂ
line a baking sheet with parchment paper
- In a large mixing bowl add the butter and sugar and mix, then add in the rest of the wet ingredients and mix well.
- Add in the dry ingredients and mix well.
- Stir in the chocolate chips and then fold in the peanut butter gently.
- Place in the fridge for 1 hour.
- Line 2 baking sheets with parchment paper and form 6 large golf ball sized tall balls on each baking sheet and press them to flatten.
- Place 1 tray in the oven and the other in the fridge (remove from fridge 5 minutes before putting in the oven)
- Bake for 15 minutes and then let cool completely before handling or they will fall apart, they need time to set. (at least 30 minutes)
Notes
Store in a sealed container or ziplock bag for 4-5 days.
Can form balls and freeze for up to 1 month, when ready to bake remove and let thaw in the fridge over night or on the counter for 1-2 hours, or if you are super impatient like me you can let them sit out while the oven pre-heats and then bake them 2-3 minutes longer than the recipe states, just remember the colder the dough is the thicker the cookie will be and it won’t spread as much as the original recipe did.

hey! pretty sure I already answered the email about this... but just in case you didn't get it, I haven not tried this with a GF flour yet, I would suggest trying with Bob's Red Mill garbanzo fave bean all purpose mixture in the red package if you feel like experimenting... if not here is two links to very similar cookies that you could use instead and just add the chocolate chunks to the PB cookies or add PB to the chocolate chunk cookie linked below! they are two of my fave GF ones they're amazing!
