The BIG difference here in these cookies that I think you will LOVE is the Chocolate! 😉
When you first bite into these chocolate peanut butter fudge cookies they might seem a tad bit dry (only for a second) but once they absorb in your mouth, they melt into a completely mouthwatering fudge like chocolate mess in yo’ mouth!
Seriously these chocolate cookies almost turn into the consistency of melted chocolate in your mouth! aka: fudge! Who wouldn’t love that? 😉
Let’s talk about the super simple ingredients for a second, peanut butter… I used a creamy one from PB&Co. but it will work with all natural peanut butter as well (ingredients just peanuts) the only thing to make sure of is to stir it up and leave it in the fridge overnight so it can get a little more firm and not so runny otherwise it may be really hard to make cookie balls!
Next ingredient is the unsweetened cocoa powder, not the sweetened ones with sugar in them so make sure its 100% pure… you could most likely sub it for raw cacao powder if you prefer although I have not tried it, I’m sure it would be fine.
Next up is the maple syrup, that’s our sweetener in these cookies as well as vanilla.

Chocolate Peanut Butter Fudge Cookies
Chocolate Peanut Butter Fudge Cookies that are Vegan and Gluten free and melt in your mouth! Soft and super quick and easy to make, only 6 ingredients!

Ingredients
- 1 flax egg (1 tbsp ground flax seed with 3 tbsp water *SEE NOTES)
- 1 cup natural creamy peanut butter (I used PB&Co. white chocolate)
- ¼ cup pure maple syrup
- 1 tsp vanilla
- 4 TBSP unsweetened cocoa powder
- 1 tsp baking soda
Instructions
- Pre-heat the oven to 350 degrees F and line a baking sheet with parchment paper or spray with non-stick spray.
- Make the flax egg in a small bowl first and set it aside to thicken and get gel like. * see notes.
- In a large bowl, add the peanut butter (at room temp, not melted just creamy) and then proceed to add the maple syrup, vanilla, cocoa powder, baking soda and the flax egg last because it should be thickened by this time.
- Mix everything until it forms a batter.
- Roll them into balls about 1 ½ tbsp. big and place them on the lined baking sheet, lightly pressing them down with your hands, not flat but not round balls either.
- Once the oven is pre-heated, place them in the oven for 14 minutes.
- Remove them from the oven and let them sit for at least 15-20 minutes to set, otherwise they will just fall apart!
- Makes about 12 smaller cookies.
- Store in a sealed container for 2-3 days
Notes
*Because these are fragile I suggest making them smaller rather than bigger just because they seem to hold together better when they aren’t super big!
*1 FLAX egg is 1 tablespoon flax seeds ground up (which will make about 1 ½ tablespoon flax meal) mixed with 3 tablespoon water and let sit until it gets a gel like consistency.
*For the peanut butter I used PB&Co. white chocolate wonderful… you can use all natural peanut butter as well but it will be slightly more crunchy and be sure to stir and refrigerate it FIRST overnight so it’s not as runny otherwise you won’t be able to roll the balls.
*I have not tried it yet but, you could also use almond butter or another nut butter with varied results.

I don't see flour in the ingredient list for the chocolate pb cookies but it's there in the directions ...

I am SO sry for the typo! I'm fixing that right now! ... there is no actual flour in this recipe the "flour" is the cocoa powder... it's modified version of the plain peanut butter cookies that I have linked in the post! thanks for letting me know about this typo I hope you are having a wonderful day! 😉
