HAPPY Friday everyone! are you ready for a breakfast that tastes like dessert?! Chocolate and raspberry go so very well together so I thought I would make some waffles with those two delicious thangs!
yes I will admit I'm still obsessed with my lil waffle maker, I have made waffles so many times this past month it's crazy! I was never really a "waffle" person until I got the waffle maker and then it became my thing!
these waffles are adapted from my Best Ever Pumpkin Spiced Waffles
so this has what's been going on with us this week...our pup Kushie-mon has lesions or something in the back of his mouth on the top... we don't know what caused them or how they appeared there... the vet doesn't know what it is and the medication didn't world to get rid of it (she thought it was possible it could be inflammation so we had 10 days of antibiotics and inflammatory meds) and to make a long story short the only way to figure out what it is, to be able to figure out how to treat it, is to have surgery to remove a sample and have it tested... so that's on our schedule next week... he will go in and get a sample biopsied to find out what it is and figure out what kind of treatment to do from there...
the results will take a week to get back from the lab...I hate that I have to leave him there almost all day to have this done, he gets dropped off in the morning and we can't pick him up until that afternoon/evening because they have to watch him for a few hours after surgery ...my pups are my little side kicks, they are my children to me... I wish I could stay there with him all day...but this is the only way to find out whats going on with his mouth/throat...
anyways on to the waffles... chocolate and raspberry should should get married because they are just so wonderful together! and the waffle... let me tell you, it's light and soft and it will just fill your tummy full of so much yummi-ness that just 1 or 2 might not be enough! p.s. make extra because I love freezing them so they are just ready to eat at a later date! if you pop them in the toaster they get crispy and if you pop them in the microwave they get warm and soft! you're going to love these!
if you need a waffle maker this is the one I use... and well, I love it, it's easy and small it was super affordable!

Chocolate Raspberry Waffles Vegan GF Soy Free
Chocolate Raspberry Waffles Vegan GF Soy Free

Ingredients
- 1 ¼ cup vanilla almond milk PLUS 1 teaspoon white vinegar
- 2 ¼ cups all purpose GF flour
- 1 ½ tsp baking powder
- pinch of salt
- 1 ½ tsp sugar
- ¼ cup olive oil
- ¼ cup maple syrup
- 1 tsp vanilla
- ⅓ cup Chopped vegan chocolate chips
- ⅓ cup chopped frozen or fresh raspberries (I used frozen)
- topping suggestions:
- raspberries for topping or fruit of choice
- maple syrup for topping
- vegan butter for topping
Instructions
- first turn your waffle iron on so it can heat up, I put mine on high heat but read your waffle iron instructions because they all differ
- next in a small bowl put your almond milk and vinegar and stir, let sit while mixing other ingredients
- in a large bowl add you GF flour, bakind powder, salt, sugar, and mix it all together
- then add you olive oil, maple syrup, and vanilla and mix
- add you almond milk and vinegar mixture and stir just until no lumps are in the batter, try not to over mix the batter
- add your chopped chocolate and raspberries a fold into the batter
- transfer into a cup so it's easy to pour into the waffle iron
- cook according to your waffle iron instructions
- enjoy
Notes
these freeze really well, so make extra!
just take them out of the freezer and pop them in the toaster or the microwave depending if you want them soft or crispy!

I'm sorry to hear about your dog, Michele! I hope the biopsy goes well and they can figure out how to get him better. I've been through some hard times with my dogs when I was little, so I know what it's like! But onto these waffles...love them! they are SO good frozen seriously... I actually like to microwave them after they are frozen cause they get a soft and yummy 😉 but the toaste is good too! you should totally try them! thanks Laura!

Oh, I hope all goes well with your dog. I agree, our dogs are part of our family, and we worry about them as much as we do the humans in our household. Our 131/2 year old black Lab, Guinness, is not going to be with us much longer. It's killing us to watch his health decline so rapidly. All we can do is spoil him with love at this point because he isn't taking food anymore. Your dog is in my thoughts and prayers.
On a cheerier note - those waffles look amazing! I love the combination of raspberry and chocolate. Yum!!! I'd also like to know what kind of juice that is. It looks delicious. 🙂

;-( poor Guinness... I'm so sorry to hear that, it's super rough to watch that we just went through that with our family cat almost 2 months ago he was 20 years old... you get so attached you think they are never going to go anywhere... and the juice is actually Bolthouse Multi-V juice, it's SO good I drink their juices almost every morning and I put them in smoothies they are all fruit juice no added sugar and super yummy! 😉

I've been thinking about buying a waffle maker, it seems like such a nice change-up for breakfast, especially during the upcoming winter months. These look so delish! Is there any better combinations that chocolate and raspberry?!! I think not! If I buy a waffle maker, just know you inspired me 🙂
