So I am not going to complain about how cold it is today (even though it's freezing) ... was that me complaining? lets pretend it wasn't K? ...OK! 😉
happy middle of the week to ya! I hope you are all feeling good? the flu has been going around really bad around here, Nick was sick over the weekend and now I have a sore throat and achy body! sometimes I just wish "getting sick" didn't exist hahaha if only that could be reality, right?!
but on a better note, things are finally starting to settle down! that past 3 months have been pretty hectic one thing after another, dog surgery, then holidays, Nick changing jobs and then changing hours, I feel like I haven't been able to get in the kitchen for anything other than microwave vegetables and some pasta or rice! lol WELL I am hoping now that things have seemed to calm down and we are getting back to a schedule I can get back to posting 2-3 times per week!
*Have any of you used artificial lighting for photographing your food? I know it's not as great as natural light but I think I need to look into it since I have such a weird schedule now... just wondering...?
Any hoo! ... if that above Nice Cream is do-able for you I HIGHLY recommend it 😉 BUT if you have one of the house holds with little ones where you simply can not get out the blender at midnight... then say hello to your Nice Cream Cups!
simply make in advance and when you are ready for that midnight hungry attack it will be ready and waiting for you! trust me, you will thank me for these later! 😉
p.s. if you want it like a nice cream you can just pop them in the microwave for 15 seconds!
I really hope you give these a try I would only store them in the freezer up to 3 days though otherwise they tend to get a little freezer bite? frost bite? what ever it's called hehe?
whats next? cupcakes sound good, or maybe a dessert bread, or cookies!? maybeee I'll attempt another cinnamon roll again, I have failed at it multiple times! If you have tips for vegan GF cinnamon rolls please fill me in, mine are always too dense and stick to the roof of your mouth, like not in a good way! I guess we will see... can you tell I am writing this while I am hungry?

Chunky Monkey Nice Cream and Cups Vegan GF Soy Free
Chunky Monkey Nice Cream and Cups
- Prep Time: 5 mins
- Cook Time: 5 mins
- Total Time: 10 mins
- Category: Chunky Monkey Nice Cream and Cups
- 2 frozen bananas
- 1 TBSP all natural PB
- small palm full of Vegan Chocolate Chips
- blend everything in a food processor and ENJOY!
- add extra goodies on top: PB, Peanuts, Choc Chips!
for the CUPS just simply take the mixture and place it in a cupcake tin with cupcake liners (I only filled mine half full) and place in the freezer until formed (2-3 hours)
p.s. if you want the cups to be like a nice cream you can just pop them in the microwave for 15 seconds!
