Cinnamon PB Oat Chocolate Nut Cookies... these are a doosey now ... they are ... Vegan-GF-Soy Free-Oil Free-Egg Free! and guess what? they still tastes AH-mazing!!!
the texture is almost like a oatmeal raisin cookie 😉
this was not easy to make a cookie that was free of all this things listed above but still tastes amazing! 😉
sooo the weather...we got snow/rain today :-/ it sounded like sand hitting the window! ish! totally ready for summer!
BUT this weather makes it nice to stay in and make cookies (minus the part of no sunshine for pictures HA) funny how there's usually a catch hu?
anyways it's all good, I know summer is coming and I am counting down the days!

as for life... it's been busy and a little wacky, Nick is still at his new job that he took around Christmas time EXCEPT (the catch like I said above) he now works night shift! meaning he doesn't get home until 12:30-1:00 o'clock! meaning we are up late! till like 3-4 ish' talk about un-healthy! it's ok our plan is that it is only temporary!
anyways that was a quick update now on to things yummies! ...
now like I mentioned above these remind me of an oatmeal raisin cookie, except without the raisins lol!
they are soft and chewy
healthy and almost totally allergy free (nuts could be left out)
healthy enough to eat for breakfast
and I mean they are just completely YUMMMY!
have these with a little almond milk and your good -to - go!

Cinnamon PB Oat Chocolate Nut Cookies Vegan GF Soy Free Oil Free

Ingredients
- ½ cup GF rolled oats
- ½ cup GF all purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- 2 TBSP packed brown sugar
- â…“ cup chopped vegan chocolate chips
- â…“ cup chopped almond (or other nut of choice)
- 4 oz. unsweetened applesauce
- ¼ cup all natural PB
- 1 tsp vanilla
Instructions
- pre-heat the oven to 370
- in a bowl mix all the dry ingredients, Oats, GF Flour, baking soda, baking powder, cinnamon, brown sugar and stir until well incorporated!
- chop your chocolate chips and almonds and add to the mixture!
- in a separate bowl mix your applesauce, PB, and vanilla stir really well! (if your PB was in the fridge be sure to melt it FIRST)!
- add wet ingredients to dry ingredients and mix really well... it will seem to dry to begin with but keep mixing! it will turn into a sticky cookie batter!
- spray your hands with cooking spray and form a cookies shape and place on a baking sheet lined with parchment paper!
- *bake for 15 minutes*
- let cool 5 minutes and enjoy!!!
