     I felt like some good ol’ chocolate chip cookies, the classic soft kind that has a hint of vanilla taste to it with big chocolate chunks! Sounds tasty right?! I hope you said yes because that’s what I’m showing you today!

    There are a few big differences between these Classic Chocolate Chip Cookies and the average ones you buy at the bakery, these ones are Vegan (OBVS) 😉 gluten free, soy free and mostly refined sugar free depending on how you classify chocolate chips??? HA! The cookie itself is sweetened with maple syrup so if you want to keep this completely refined sugar free you could swap the chocolate chips for some kind of nut if you would like!

    Next I want to take a second to talk about the flour, I used the Bob’s Red Mill all-purpose baking flour in the RED package (NOT the 1 for 1 all-purpose baking flour in the blue package) they are completely different so make sure you are using the right kind!

    Ok, so these cookies could not be any easier to make everything goes in one bowl! It gets all mixed up and it forms a classic looking cookie dough, not too sticky not too runny just a perfect cookie dough!

    Be sure to line a baking sheet with parchment paper it makes a world of difference when you go to remove them! Also when they are done baking let them cool for about 15 minutes, they need to rest when they get out of the oven otherwise they are fragile.  Once they are cooled off though they are totally normal cookies not fragile fall apart ones, just your average chocolate chip cookie with a healthy makeover!

    Classic Chocolate Chip Cookies Vegan Gluten Free

    Ingredients

    Scale
    • DRY INGREDIENTS:
    • 1 ¼ cup Bob’s Red Mill gluten free all-purpose flour (red package)
    • ½ tsp baking soda
    • ¼ tsp or pinch of salt
    • ⅓ cup chocolate chip or chocolate chunks chopped up (I use Enjoy Life brand)
    • WET INGREDIENTS:
    • ⅓ cup plus 1 tablespoon creamy natural almond butter
    • ⅓ cup pure maple syrup
    • 1 tsp vanilla
    • 2 TBSP vegan butter softened almost melted (I use Earth Balance in the red tub) OR melted coconut oil

    Instructions

    1. Pre heat the oven to 350 F and line a baking sheet with parchment paper.
    2. In a large mixing bowl add all the dry ingredients (except the chocolate chips)and whisk together.
    3. Add in the wet ingredients and mix well.
    4. Stir in chocolate chips.
    5. Form balls and place them on the baking sheet, push them down to flatten them most of the way.
    6. Place in the oven for 14 minutes. Let cool 15 minutes before eating or removing from baking sheet.
    7. Makes 7-9 cookies

    Notes

    I used the Bob’s Red Mill all-purpose baking flour in the RED package (NOT the 1 for 1 all-purpose baking flour in the blue package) they are completely different so make sure you are using the right kind!

    These should be stored in a closed container for about 5 days

    this recipe also works when subbing the butter for coconut oil
