Seriouslyyyy! This cake is like give me a glass of wine, some chocolate cake and light some candles! It's so indulgent and rich and what's better than chocolate? .... I hope you said nothing! π
This cake is made with almond flour to give it a rich nutty flavor, of course a lot of chocolate and the sauce has espresso! It's like savory-sweet-melt in your mouth- give me the whole cake- delicious!
We like to try our best to have at least 1 night a week (usually Saturday) to devote to some quality time together, sometimes it's making dinner together, going out to dinner, talking, or literally just the couch and a movie! But sometimes you just want to do something a little extra special! This cake has you covered! It's the perfect dessert to end the night, or start the night if your a dessert first kinda couple π no judgement here!

Date Night Chocolate Almond Espresso Cake
This Date Night Chocolate Almond Espresso Cake is the perfect date night indulgence! It's rich in chocolate flavor with a hint of espresso! It's also Vegan and Gluten Free!

Ingredients
- 2 cups almond meal/flour (I used Bob's Red Mill)
- β cup 100% cocoa powder
- Pinch of sea salt
- 1 Β½ tsp baking powder
- 2 flax eggs (2 tbsp ground flax mixed with 6 tbsp water)
- ΒΌ cup melted butter (I use Earth Balance in the red tub)
- β cup maple syrup
- 2 tbsp unsweetened vanilla almond milk (I used SILK brand)
- Chocolate Espresso Sauce:
- 4 oz. dark chocolate bar (70% or higher)
- 3 oz. espresso or strong brewed coffee
- 4 tbsp unsweetened vanilla almond milk (I used SILK brand)
Instructions
- Pre heat the oven at 350 and spray a cake pan with non stick spray (I used a loaf style pan 4X12)
- First prepare you flax eggs (if using whole flax seeds grind them up first and place in bowl with water and set aside)
- In a large mixing bowl add all your dry ingredients (aloud flour, cocoa powder, salt, baking powder)
- Melt your butter in the microwave, pour into dry ingredients, add your maple syrup and almond milk and mix until well combined.
- Add your flax eggs and mix well!
- Pour into your baking pan and place in oven and bake for 40 minutes
- After it comes out of the oven start to prepare your sauce, chose your chocolate bar really tiny and dump into a bowl, next I used instant espresso so in a microwaveable cup add 3 oz of water and your 4 tablespoon almond milk and microwave for about 1 minute, add 1 teaspoon espresso powder, stir and pour over chocolate, continue to stir until creamy... Let sit for about 10 minutes
- Flip your cake over on top a cookie sheet (or something else of your preference) and pour half the chocolate over the top and top with raspberries or strawberries!
- Save the rest of the chocolate to add over each slice served!
- Makes about 8-10 slices
