    Easiest Fastest Pasta Salad -Vegan

    ok guys... I know I have been MIA for a lil bit and I'm SO sorry about that... there has just been a lot going on around here and I've been resorting to really easy plain food lately still healthy of course but easy fast things that would be totally boring LOL...

    anyways I've got myself a list of things that I want to try making so it's time to get back in the groove of things... before my list gets too long hahaha

     so our Green onions are starting to come up now YAYY so excited about that! we didn't plant them they were the ones from last year! we brought them inside at the end of the season and they actually came back this year! I don't usually have luck with things that are "supposed to come back" so this is awesome!

    we are going to start our garden soon so I'll have pictures to show soon!!!

    our list this year for our garden goes like this so far:

    regular onions, cherry tomatoes, green beans, snap peas, peppers (a couple kinds), cucumbers, maybe lettuce... and I'm sure the list will grow lol

     

    as for this weekend, we are putting up a dog fence... we did not intend to do this until we bought land to build a house BUT our neighbor just got a dog and lets just say they aren't very responsible... they can't keep their dog in their own yard and it keeps coming to our door and antagonizing my dogs... so instead of starting an issue we decided we're just going to put up a fence and solve the problem for now... it works right!

    now about this pasta salad! it's SO easy (ya know I've been making easy things lately like I mentioned) it may be quick and easy to throw together butit is definitely TASTY and very versatile! so many different options you could add in here (see recipe for ideas!) 😉

    I used the multi-color veggie pasta in here so it's NOT GF this time but I'm sure you could swap the pasta for a GF kind if you would like!

    and I also used roasted salted almonds in here instead of plain because it gives it SO much more flavor!

    Easiest Fastest Pasta Salad -Vegan

    Ingredients

    Scale
    • 1 16 oz. box of multi-color veggie pasta
    • â…“ cup vegenaise (or other vegan mayonnaise substitute)
    • ½ cup Roasted salted Almonds
    • salt/pepper to taste

    Instructions

    1. in a large pan ¾ full bring water to a boil
    2. add pasta and cook for about 14 minutes (give or take depending if you like your pasta al dente or softer)
    3. strain water from pasta
    4. in a large mixing bowl add your pasta, vegenaise, almonds, salt, pepper and mix everything together
    5. optional add ins:
    6. Grapes
    7. Celery
    8. other nuts
    9. dried fruit
    10. chopped apples
    11. chopped onion

      This reminds me of my mom's pasta salad. I love the addition of the salted almonds.

      Ugh! I can't stand irresponsible pet owners. You'll love having a fence though, I'm so happy that I can let my dogs out and they can run around and I don't have to worry about them running away.
