This Blueberry and Apple Crumble is naturally sweet with blueberries and apples coated in a maple syrup, cinnamon sauce topped with a buttery oat crumble topping and of course some vanilla ice cream!

Ingredients

Units Scale
  • FILLING:
  • 2 cups fresh blueberries
  • 1-2 medium apples
  • 1 tsp vanilla
  • 1 TBSP pure maple syrup
  • 1 TBSP all purpose flour
  • TOPPING:
  • 1 cup rolled oats
  • 1/2 cup all purpose flour
  • 1/4 cup pure maple syrup
  • 1/2 tsp vanilla
  • 1/4 cup butter melted (I used miyokos vegan)
  • 1/2 tsp cinnamon
  • EXTRA OPTIONAL:
  • Vanilla ice cream OR
  • Banana Nice cream (frozen banana’s blended in a good blender or food processor with a dash of water (about 1 tbsp) and blended until creamy, you will need to push down sides several times… can also add flavorings if you would like, vanilla, cinnamon, other fruit etc.)

Instructions

  1. Pre heat the oven at 350° degrees F and get a pie baking dish out and lightly rub the bottom with some butter.
  2. next you want to wash the blueberries and dry them and thinly slice the apples, I used a mandolin for that.
  3. In a large bowl add the blueberries, apples, vanilla, and maple syrup to the berries and give it a toss until everything is coated. Then add the flour and toss it gently.
  4. In a separate bowl add the butter first and melt it, then add the maple syrup, vanilla, cinnamon and give it a stir.  Then add in the oats and flour and stir until it forms a crumble topping.
  5. Pour blueberry apple fruit filling mixture into the pie dish and add the oat crumble topping over the top carefully using a spoon to scoop it on top!
  6. Place in the oven for 45 minutes.
  7. Let cool completely before serving!

Notes

If you decide to use frozen blueberries be sure to fully thaw them and dump out the excess liquid or atleast make sure there isn't any ice on them otherwise your crumble recipe will get soggy.  Also ok if you use frozen wild blueberries (the are smaller blueberries) just make sure to that them first and drain the excess.

If you don't have maple syrup I recommend just using the same portions of brown sugar instead so 1 tbsp brown sugar in the filling and 1/4 cup brown sugar for the crumble topping

1-2 apple depends on your pie dish size, (or if you are using a baking dish, if two will fit them use two if your pie dish is shallow you may only got 1 apple.
