These Easy + Healthy Vegan Salad Ideas are great for meal prepping, quick and easy to make, healthy and full of nutrients and absolutely delicious!
These are some of my favorites salads that I make on a regular basis and I think you will love them too because they are not only tasty and filling they are also very easy to make and full of vitamins and minerals! Nutrient powerhouse salads!
Broccoli + Quinoa Salad:
- Quinoa + Broccoli cooked stove top, once quinoa is mostly cooked add the broccoli on top of the quinoa and place the lid back on top, allow to steam for about 5 minutes until the broccoli is soft)
- Lettuce
- Onion
DRESSING:
- 1 tablespoon natural almond butter
- ¼ teaspoon onion powder
- ¼ teaspoon chili powder
- water added slowly to thin out into a drizzle consistency
Clean n’ Green Salad:
(chop everything)
- Lettuce
- Mushrooms
- Cherry or grape tomatoes
- Onion
- Celery
- Avocado mashed with a squeeze of lemon or lime
- Sprouts I used broccoli sprouts
DRESSING:
- Hummus I used roasted red pepper flavor
- Lemon juice (about ½ a lemon, enough to mix in the hummus and make it a drizzle consistency)
“TUNA” Salad Recipe:
(for the “tuna”)

- 1 Can 15-16 oz. of chickpeas or garbanzo beans (drained and rinsed)
- ⅓ cup chopped purple onion
- ½ cup celery chopped small
- ½ cup grated carrots (about 1 large Carrot or 6-9 small snacking carrots)
- ⅓ cup pickles chopped up
optional: GF bread to serve on or enjoy this recipe plain.
DRESSING:
- 1 teaspoon spicy brown mustard
- 1 tablespoon natural tahini
- ½ teaspoon apple cider vinegar
- ¼ teaspoon onion powder
- 2 - 2 ½ tablespoon water to thin is out (you want it to be pretty think so it will mix in and evenly coat everything)
for the rest of the salad:
- Lettuce
- Avocado with a squeeze of lemon of lime mashed up
- Sprouts i used broccoli sprouts
