This Easy Holiday Salad is the perfect dish for your upcoming holiday! Either make this for your family at home or bring it to a holiday party you are attending! it's super easy + sweet and of course VEGAN!
Okay! This Easy Holiday Salad can be explained in one word Flavorful!
It is super easy to make, if you know how to make rice then you're good to go!
It's sweet but tangy at the same time, the citrus from the oranges and pomegranate seeds give it that sweet and tangy flavor but the salad and the rice give it that filling meal like vibe to it! This could easily be a side dish or a meal. (You may want to double the recipe if this is a meal though!)
I used brown rice in here (mostly because that's what I had) but you could really use any kind of rice you have on hand wild rice, basmati rice, white rice anything. (with white rice you might need a little extra olive oil though because it tends to be really sticky)
As for the pomegranate seeds, if you love them put them in here! If you hate them, add something else like more oranges or a different sweet fruit like chopped grapes would be tasty... I have a love hate relationship with pomegranate seeds, they are super healthy and I love the taste but sometimes those big seeds bother me depending on my mood 😉 so decide your mood and adjust to your liking! 😉
We all loved this salad even my granny! She was super happy when dinner was brought over to her, usually when I make meals for us to eat or for the blog I try to make extra to send over to her and either myself or my mom brings it over, it's nice because she eats pretty healthy too so most things I make she loves! Plus who doesn't love a meal that's already been made? ? ?
So if you have a holiday party to go to or maybe you're having people over to your house, this Easy Holiday Salad is perfect! If your bringing it somewhere just pack the dressing on the side and pour it over the salad when you get there!

Easy Holiday Salad

- 1 box of Spring mix salad (about 3-5 cups
- 3 cups cooked brown rice (about 1 ½ when dry)
- 1 whole pomegranate
- 1 small red onion (or ½ a large one)
- 1 large orange (pealed and chopped)
- ⅔ cup roughly chopped walnuts
- ⅓ cup olive oil
- juice of 1 lemon
- juice of 1 orange
- 1 tsp maple syrup
- salt/pepper to taste
- in a large mixing bowl add all you ingredients and then drizzle dressing over the top and mix OR you can keep all the ingredients separate and assembly the salad individually!
if your not a fan of pomegranates that's okay! you can simply omit them and add another orange or different sweet fruit of your choice!
