Lets make the best Falafel Sandwich recipe on Naan bread instead of a pita and top it with a delicious hummus sauce over the top. So delicious that calories will be the last thing on your mind!

Ingredients

1 batch Baked Falafel

6  pieces Naan or pita bread

2-4 Soft ripe Avocados

2 Tomatoes

1 Onion

4 TBSP Roasted Red Pepper Hummus

2 TBSP juiced lemon

Instructions

  1. Make a batch of my Baked Falafel
  2. Assemble the sandwich by first laying out the naan bread or your pitas, spread 1/4 - 1/2 of an avocado on the bottom of the bread, add the baked falafel balls then top with sliced tomato and onion.
  3. Mix the dressing my adding 4 TBSP of store bought roasted red pepper hummus with 2 TBSP fresh squeezed lemon juice to achieve a runny drizzle consistency and then drizzle over the top of the falafel sandwich

Notes

6 sandwiches 4-5 balls per sandwich 

Extra Baked Falafel balls can be stored in a sealed container in the fridge up to 4 days or freezer up to 1 month.
