This is my Favorite Quinoa with Sweet Maple Tahini Sauce. It is simple and fast to make, perfect lunch or dinner. Vegan and gluten free.

This is one of my FAVORITE quinoa recipes because not only does it taste delicious but I generally always have these 7 simple ingredients on hand, so I don’t need to go grocery shopping to put it together! This is one of those winning, go-to, always on repeat recipes! 😉
I think you are going to love it! And like always if you aren’t a quinoa fan you can just swap it for rice.
Alright let’s skip right to the dressing first and talk about how tahini is a very different taste… I used natural creamy/runny tahini, the ingredients were just sesame seeds and sea salt. Now on it’s own tahini is not very tasty it pairs really well with sweet flavors and savory flavors though so that is what we are doing today.
I mixed a little bit of maple syrup in with the tahini (you can adjust and add a little more if desired) that is the sweet part and then it is paired with a savory quinoa that has been cooked in low sodium vegetable broth! I don’t recommend tasting the tahini on its own because you probably won’t like it, you need all three things together! 😉
Ok, so the quinoa… I always choose low sodium broth because salt makes you retain water and trust me you are getting enough salt everywhere else in your diet most likely so no need to over-do it! The broth adds a lot of flavor to the quinoa but if you feel it’s not enough you can always add a little bit of seasoning to it like fresh cracked black pepper and a pinch of onion and garlic powder.

Side salad- ALWAYS! I like to add greens to basically every meal because I am just not satisfied without those yummy + fresh healthy greens! I used spring mix lettuce, sliced avocado and sliced tomatoes! Y-U-M!

Favorite Quinoa with Sweet Maple Tahini Sauce

Ingredients
- ½ cup dry mixed color quinoa
- 1 cup low sodium vegetable broth
- Lettuce (I use spring mix or romaine)
- Avocado (¼-1/2 sliced)
- 1 small tomato
- 1-2 tablespoon natural runny tahini
- ½-1 teaspoon maple syrup
- Lemon slices (optional)
- Sprinkle of sesame seeds (optional)
Instructions
- Cook the quinoa according to directions, on package using the vegetable broth as the liquid to be cooked in.
- Once the quinoa is cooked place a bed of lettuce on the bottom of the plate and top it with the quinoa, sliced avocado, sliced tomato and mix the tahini and maple syrup in a small bowls and drizzle over the top!
- Squeeze lemon over the top if desired! Sprinkle of sesame seeds (optional).
- Serves 1-2
