If you have been around for a while it’s not surprise that I love quinoa and I also love curry flavors… AND that I always tell you if you don’t like quinoa this recipe totally works with rice as well! 😉
Anyways… this salad is a go-to for me, I have it frequently because it is easy and fast to make and it stays fresh tasting in the fridge for like 4-5 days! Generally I make a big batch and eat on it for most of the week sometimes pairing it with different veggies to mix things up.
Today I am showing you my favorite combo which also happens to be the easiest! I mean who doesn’t always have these few simple things in their kitchen??? Avocado and tomato were made for each other! I think you are going to love this tomato curry quinoa salad! 😉
Let’s break it down, first you cook the quinoa in water. While it is cooking you can chop up the onion and place it in a skillet pan, once the quinoa is about 5 minutes from done you want to start the skillet with the onion on low/medium heat so it can cook a little bit.
Next add the quinoa to the skillet with the spices and mix it all up. Let it continue to cook until it’s fragrant and then it’s done!
Place it over a bed of lettuce and add the toppings!!! Avocado + tomato with a squeeze of lemon it’s like nutty, spicy, creamy and fresh! Totally YUM!

Favorite Tomato Curry Quinoa Salad

Ingredients
- ¼ white onion chopped
- ½ cup dry quinoa cooked in water
- SPICES:
- ¼ tsp curry
- ¼ tsp turmeric
- ⅛ tsp paprika
- ⅛ tsp cumin
- ⅛ tsp onion powder
- Pinch black pepper
- SERVE WITH:
- A bed of lettuce (I like spring mix)
- Avocado slices
- Tomato slices
- Lemon slice
Instructions
- Make the quinoa according to directions, I usually use a little less liquid than what the package calls for when I make quinoa so it’s a little less soft.
- When there is about 5 minutes left on the quinoa, chop the onion and place in a skillet pan (cooking spray optional) and let cook until slightly soft (about 3 minutes on medium heat) then add the cooked quinoa and all the spices. Cook until fragrant (about 5 minutes) ***add a squeeze or lemon is it's sticking to the pan.
- Serve on a bed of lettuce with avocado, tomato and lemon toppings!

Notes
OPTIONAL TIP: if NOT using the onion you can just add the spices right to the pot with the quinoa that has finished cooking, let continue cooking another 2 minutes and then serve!
