OK!!! Do you remember my Healthy Vegan Cinnamon French Toast form a while back? Well it’s one of the most popular recipes on the blog and I also get ton’s of questions on it about what to replace the banana with in that recipe… SO here is the banana free version of the French toast! … of course these are French toast sticks but that’s obviously optional, you don’t have to cut the bread into sticks you can just have this be a classic + yummy French toast recipe!

The flavor is super yum and on point, with hints of cinnamon, vanilla and sugar! It's super soft, moist, slightly gooey and oh-so-YUM!
It's SO easy to make...mix a batter and dip the toast!
SUPER easy to clean up, basically just a bowl and whisk plus a pan.
TIPS for making: mix the batter, slice the toast, spray the pan with non-stick spray before adding the sticks to the pan- be sure the pan is med/hot, spray between each batch, and keep an eye on the so they don’t burn!
Customization: you could totally top this with some chocolate chips or some vegan whipped cream and sprinkle a little more cinnamon + Sugar on top with some fresh berries for more of a dessert style! … you know me, I’m traditional when it comes to recipes (most of the time) I just like the classics!
Additional notes: the texture of this French toast will greatly be affected by the type of bread you use, I used Texas toast bread and it makes it a lot more soft and flimsy like you would expect from a soft white bread and this is my favorite way BUT if you want a more firm texture choose a more firm bread like a bakery loaf style bread that has more of a firm texture also if you want to make this GF you could use your favorite GF bread!

Ingredients
6 slices of Texas toast
BATTER TO DIP:
- 1 ½ cups non-dairy milk // I use SILK unsweetened almond
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 TBSP unbleached AP flour
TOPPPING:
- spinkle with cinnamon + Sugar
- Pure maple syrup
- Fruit
- Vegan whipped cream
Instructions
- Slice each piece of toast into 3 so they look like sticks (if making sticks otherwise leave the slices of toast whole)
- In a large mixing bowl add all the ingredients except the flour and whisk well, slowly add the flour while whisking, a little bit of clumping is ok and un-avoidable but if there is just too much clumping you can add the mixer to a small blender and blend it up really quick.
- Heat up a skillet on the stove, once hot reduce the heat to medium, spray with non-stick spray and dip the toast or slices into the batter and place on skillet, let cook until golden brown (about 3 minutes) and then flip and cook other side. Repeat until everything is used up. (keep spraying pan between each batch.
Notes
*You can easily double this recipe or even triple it depending on how much you want to make!
*You can make this gluten free by swapping the Texas toast for your favorite GF style toast and swapping the AP flour in the batter for a GF variety such as Bob’s Red Mil all purpose flour in the red pkg. or tapioca flour… something that has a binding quality, nothing like plain rice or plain buckwheat flour it just won’t thicken anything.
*The type of toast you use will greatly affect the texture, I used Texas that which was very soft and almost gooey in the center, if you want a more hearty texture I suggest using a more firm toast like a French bread of something similar!
