Today I am giving you a reason to eat more peaches! A Harvard study found that women eating at least 2 servings of peaches per week lowered their risk of certain types of breast cancer by up to 40%!
That is an insanely large percentage if you ask me, definitely a reason to each more peaches! So today I am showing you a lovely salad that will give you a serving a peaches as well as vitamin C packed strawberries and fiber + minerals in the greens! Oh AND a sprinkle of hemp seeds on top for healthy hair skin and nails!

In case you aren’t familiar with hemp hearts yet, you need to be! They are full of healthy antioxidants, amino acids, omega 3 & 6, fiber, zinc, iron and a bazillion more! I STRONGLY encourage you to Read more here.
On to assembly, you need a few handfuls of lettuce (I used baby romaine leafs) with a celery stem, strawberries sliced and peaches sliced! Sprinkle on some hemp seeds and you have a simple healthy filling salad!
I included an optional maple lemon dressing but honestly it tastes amazing without any dressing at all because the fruit is sweet and hydrating! But I know if I didn’t give a dressing option some of you would not be happy with me so I included a sweet and citrus option! 😉

Fruity Strawberry Peach Superfood Salad

Ingredients
- 2-3 large handfuls of lettuce (I used a baby romaine mix)
- 1 peach (or nectarine) chopped up
- 6-9 fresh strawberries sliced
- 1 tsp hemp hearts
- 1-3 stems of celery chopped up
- OPTIONAL DRESSING:
- 3 TBSP fresh squeezed lemon juice
- 1-2 teaspoon pure maple syrup
Instructions
- Chop the peach, strawberries and celery.
- Place the bed of lettuce in a bowl or on a plate.
- Add the chopped strawberries, peaches and celery! Sprinkle on the hemp seeds and enjoy!
- DRESSING OPTION:
- ***if you are using the optional dressing then I recommend you add the lettuce in a bowl and pour the dressing on JUST the lettuce and use your hands to mix it up and make sure all the leaves are coated well (like you would do when massaging kale) ... then make the bed of lettuce and top it with the fruit! this way it will feel well coated instead of the dresing sticking to the fruit that is already naturally sweet!
