This needs to go on your "to-make" list for this weekend, you are going to love them! They are so simple to make and they are the perfect treat to have when that I need chocolate monster comes out! … wait…isn’t that like always? Ha! 😉
I hope you have all been enjoying summer, I can’t believe it’s almost September! Yeahhh I’m go to cry about it because I just wish it was summer all year round’
Anyways these are the perfect dessert to cheer you up from the summer ending blues!
They only require 3 ingredients!
Vegan chocolate chips (I use Enjoy Life brand) pitted medjool dates (the healthy part of this) and peanut butter! That’s it! You probably already have these things on hand… well maybe not the dates if you aren’t a person that generally eats them but almost any grocery store has them! Sooo what are you waiting for? Go get some!
So, let’s take a second to talk about the healthy part of these yummy little delights!
Dates! Did you know how wonderful they are? Let me list a few things here but feel free to look up even more!
They are high in fiber, vitamins, minerals and natural sugars!
They are high in potassium and vitamin b6.
Magnesium which acts as an anti-inflammatory.
Contains copper!

Now let’s talk a little bit about how to make these Healthy 3 Ingredient Caramel Peanut Butter Cups!
Chocolate chips go in a microwave safe bowl.
Medjool dates need to have the pits and stem removed.
You need a mini food processor (if you use a large one that’s fine but you will more than likely need to double the recipe because you may have trouble only blending up 12 dates, not enough for a large food processor they will probably fling around and stay chunky)
Into the food processor goes the dates, peanut butter and water (yeah I know water is a 4th ingredient, but I really don’t considered it an ingredient as most people just have water on hand)… blend and pulse until the mixture is smooth!
Get your mini cupcake liners and either place them on a cookie sheet or if you have a mini cupcake tin that’s great too it will make life easier! Get those cupcake liners ready.
Melt that chocolate. Put a little bit in the bottom of each cupcake liner and using the back of a small spoon try to coat the sides of the cupcake liner as best you can about half ways up… not a big deal if you can’t manage this, it just means you may see some of the caramel on the sides.
Freeze the first layer for 5 minutes. Remove and add the caramel to each one. No need to freeze again just add the rest of the chocolate over each cup!
Then place it in the freezer for another 30 minutes until firm!

Healthy 3 Ingredient Caramel Peanut Butter Cups

Ingredients
- - 10 tablespoon vegan chocolate chips (I use Enjoy Life brand)
- - 12-14 (depending on size) pitted medjool dates
- - 2 tablespoon peanut butter
- - 2 tablespoon water
Instructions
- In a food processor (I used a mini one so if you are using a large food processor you may need to double the recipe) add the pitted medjool dates, water and peanut butter and blend/pulse until smooth!
- Melt the chocolate chips in a bowl in the microwave. Be sure to stir every 20 seconds so you do not burn the chocolate.
- Using mini cupcake liners (see notes below) place a small layer of chocolate on the bottom and smear on the sides as best you can, place in the freezer for 5 minutes.
- Remove from the freezer and add the caramel peanut butter mixture to each cup. Top with chocolate and place back in the freezer for 30 minutes!
- Remove from freezer and enjoy OR store them in the fridge up to 1 week.
- Makes about 12 cups
Notes
I keep these in the fridge for up to 1 week, you can store them in the freezer and remove 1 day before you are ready to enjoy them and place them in the fridge… I do not usually eat them straight from the freezer because the center is frozen! Can keep in the freezer up to 1 month.
For the cupcake liners, I used mini ones but NOT the tiny ones, I have seen that they come in two different mini sizes and I used the bigger mini ones. The tiny ones will work as well but they are just much harder to work with and you will get twice the amount of chocolate cups!
I also used a mini cupcake tin to put the liners in while filling and transferring them, it does make it a lot easier but it is not necessary, you can just as easily place the liners on a baking sheet or even plate to place them in the freezer.
