Second week of January and it’s time for some healthy truffle like energy balls!

Medjool dates are really the star of these energy balls, they give it the sticky truffle like texture and of course the sweetness. Medjool dates are packed full of vitamins and minerals, B6, magnesium, phosphorus, zinc, copper, iron, calcium, niacin, riboflavin, thiamin, vitamin A and C JUST TO MANE A FEW! If you want to know more just google them because they are amazing!
I LOVE using Dates as my base for energy balls like this, you may remember my chocolate coconut ones or even the blueberry muffin ones... I just love the versatility and healthy-ness of these things! 😉

In these Healthy Almond Chocolate Truffle Energy Balls I also added almond butter and cocoa powder. The almond butter is natural creamy unsalted (but I used roasted) creamy almond butter, the only ingredients should be almonds (or roasted almonds) a little salt is ok but make sure it’s not much and make sure there isn’t any other nasty ingredients!
For the cocoa powder I used unsweetened 100% dark chocolate cocoa powder but you can totally swap this for raw cacao or carob powder is you prefer!
These Almond chocolate Truffles are really great for packing in lunches or even putting in your purse for a snack later. They will get soft being out of the fridge, but they won’t melt! If you plan to travel with them you could also make them flat like a bar instead of a ball if that would be easier.
One more thing! Feel free to mix n’ match the flavors, if you don’t like almonds you could use cashew or peanut butter or even a seed butter if you have allergies! Get creative in the kitch my friends! I know you will love these! 😉

Healthy Almond Chocolate Truffle Energy Balls
Healthy Almond Chocolate Truffle Energy Balls

Ingredients
- 8-10 pitted medjool dates (¾ cup packed tightly)
- 1 ½ TBSP natural runny almond butter
- 2 TBSP unsweetened cocoa powder (or cacao/carob powder)
- OPTIONAL:
- More cocoa powder or unsweetened shredded coconut for rolling in.
Instructions
- Pit all the dates and then place everything into a food processor and process until it forms a huge sticky clump. It will be loose and crumbly first but keep going until it lumps up onto one side.
- Roll into small balls, I use 9 dates and got 8 balls from this batch.
- Roll them into the cocoa powder and store in the fridge up to 1 week!
