Nothing is better than a big bowl of comfort food on a weekend evening, especially after a long busy week!
You’re going to love how easy this is to make, it requires very little cooking effort and you’ll be sitting down eating and relaxing in no time!
Basically it’s just plain baked sweet potatoes that get all jazzed up with flavorful sauces and warn sautéed tomatoes! YUM!
pictured above is the tahini sauce and the white colored sauce is the veganaise sauce!
I have included two different options for the sauce, the first is the lime tahini sauce if you aren’t used to eating tahini this may be a flavor shock for you!!! It’s not plain I added lime and maple syrup to it but even flavoring it up like this is still an acquired taste in my opinion!
I remember the first time I tried it and let’s just say I did not like it to say the least! But that was years ago before my eating habits changed and got more clean and healthy whole food based. Plus you can’t just take tahini and slather it on a piece of toast! HA!
For those of you who don’t know what tahini is, it’s basically ground sesame seeds, just like peanut butter is ground up peanuts.
Tahini has amazing health benefits just like sesame seeds that is why I am working with it to flavor it up and incorporate it in my/our diets more!

Now on the other hand, if you can’t handle the taste of tahini I included a different sauce that is much more palatable. The base is veganaise (vegan mayo) and personally I like both sauces but this one is much more friendly if you are starting to transition into a more plant based diet! 😉

Healthy Baked Sweet Potatoes with Lime Tahini Sauce
These Healthy Baked Sweet Potatoes with Lime Tahini Sauce are the perfect comforting dinner! Two sauce options included! Vegan and Gluten Free.

Ingredients
- 4-5 sweet potatoes sliced in half
- 1 cup of sliced cherry tomatoes
- SAUCE (s):
- TAHINI LIME:
- 1 TBSP tahini
- 1 TBSP lime juice
- 1 TBSP maple syrup
- FRESH MAYO:
- 2 TBSP veganaise
- 1 TBSP lemon juice
- ½ tsp pepper
- 1/ teaspoon onion powder
- Cilantro for garnish optional
Instructions
- Per-heat the oven at 375 degrees F
- Slice the sweet potatoes in half and place them on a baking sheet and in the oven to bake for 45-55 minutes until you poke them with a fork and they are soft.
- When the potatoes are ¾ done, slice the tomatoes in half and put them in a skillet on medium heat for about 5 minutes to slightly cook and get soft and warm. optional toss the cilantro in this pan for 1 minute to soften and cook lightly.
- Prepare the sauce by mixing everything in a bowl. (which ever sauce you decide)
- Once the potatoes are done, plate them and top them with the sauce, tomatoes and optional cilantro.
- serves about 2-3
Notes
update: I guess sweet potatoes are actually white and yams are the orange ones, I used the orange ones in this recipe so whatever you call them is fine but I used the orange ones! 😉
