It’s about this time ever year that I get on a curry lovin’ kick! Remember my curry rice and curry burgers from last year? I love my curry 😉 and I think you are going to love this new curry brown rice recipe too!
It’s super simple to make especially if you are like me and cook big batches of brown rice or quinoa and keep it in the fridge for the week so it’s ready to go!
p.s. you can use quinoa for this recipe as well if you don’t want to use rice! Or even cauliflower rice!
It’s that time of year again… garden time! I can’t wait to make this curry rice bowl with some fresh tomatoes from our garden! I know don’t get too ahead of myself it’s a few months before there will even be tomatoes growing LOL but I always look forward to it! And of course I’ll try and do some posts about it!

Enough about that 😉 let’s talk about this curry rice! Making big batches like I mentioned above is your best friend because it makes a dish like this literally take about 10 minutes to make! Yes 10 minutes, chop up the veggies and toss them in a pan they will create their own juices (or add a tiny splash of water) and add the cooled rice and spices and you have the easiest super fast lunch or dinner ever!
For the spices, I put ⅛-1/4 teaspoon each… this is really a general measurement because everyone likes different amounts of taste so if that too much or not enough feel free to adjust more or less, there are no rules here! I personally use ¼ teaspoon of each except for the cayenne I only use ⅛ but that’s just how I like it so make sure you add slowly and give it a taste! That’s about it! I think you are going to love it!

Healthy Brown Rice Curry Salad Bowl
This Healthy Brown Rice Curry Salad Bowl is super easy to make plus it’s oil free, vegan and gluten free! Perfect for lunch or dinner!

Ingredients
- 1 cup cooked brown rice (about ½ cup dry)
- SPICES ⅛ - ¼ teaspoon each:
- curry
- tumeric
- cayenne
- paprika
- Fresh ground black pepper
- garlic (optional)
- Lettuce of choice
- ¼ of an avocado
- 1 small tomato or some small cherry tomatoes
- ½ cup chopped mushrooms
Instructions
- Cook the rice if it’s not already cooked and let it cool completely, I like to cook big batches plain and store them in the fridge for when I am ready to use them!
- Spray a skillet with nonstick spray and add your chopped mushrooms to the pan, slice the tomato and add that as well… let cook on medium heat for about 3-5 minutes.
- Add the cooked + cooled rice in the pan, add the spices, I wrote ⅛-1/4 teaspoon because honestly everyone’s taste is different… I used ¼ each but you can adjust according to your taste!
- Mix it all up and let it cook until it starts to smell like curry and is warm, then remove and put it on a plate
- Serve with a side salad and mash the avocado up on top. Add fresh sliced tomatoes if you would like!
