SERIOUSLY my friends, you can’t get any easier or healthier than a salad that requires only about 5 minutes of prep! (cooked option also available in the recipe) 😉
People around me sometimes ask “isn’t that plain?” my answer… NOPE! Not at all!

I’m sure it’s not the first time you have heard me say that and it definitely won’t be the last time either because I really believe life is SO much easier (and healthier) when you learn to appreciate food for what it is and not all dressed up is sauces and spices galore!
Yes, it takes time you probably won’t go from processed crap to clean whole foods overnight, I sure didn’t… I went super slow but I totally don’t regret it, food does not need to be an hour long stressful event! 😉 plus you weren’t born loving junk food, your taste buds adapt to most things.
Ok enough of me prep talking 😉 let’s get to talking about this Healthy Corn Tomato Mushroom Avocado Salad shall we?!
It’s only 5 super simple ingredients, lettuce, corn, tomato, mushroom and avocado! (3 more if you choose the cooked option)
Basically you wash, chop and assembly and even though I included measurements you don’t need to follow them, if you are SUPER hungry double it!
Now, the reason I included a cooked option is because I like it both ways, raw and cooked… of course I pictured it raw because it looks much prettier but honestly I have been eating it both ways depending on my mood.
Another reason is because you get different vitamin and minerals especially with the tomato and mushrooms, they have great raw AND cooked benefits so I like to have a variety of both raw and cooked.
Example when you cook tomatoes and mushrooms you lose some of the vitamin C but you increase other vitamins and minerals, so to me it’s all about balance and what I am in the mood for, honestly… there are so many food combing rules and how to cook rules that it could make you go crazy!
My opinion is, if you are eating plant foods (cooked or raw) you’re still better off than anyone going to get fast food! 😉

Healthy Corn Tomato Mushroom Avocado Salad
Healthy Corn Tomato Mushroom Avocado Salad! full of fresh + healthy ingredients!

Ingredients
- 2-3 handfuls of spring mix lettuce (or lettuce of choice)
- sliced mushrooms (about 2 small ones)
- ⅓ cup of fresh corn (or frozen thawed out)
- 6 sliced cherry tomatoes (I used yellow and red)
- ¼ of an avocado sliced into chunks (make sure it's soft and ripe)
- FOR THE COOKED OPTION add these (SEE INSTRUCTIONS)***
- ½ tsp tamari
- pinch black pepper
- ⅛ tsp onion powder
- DRESSING optional:
- 1 TBSP tahini
- juice of 1 small lemon
- water until desired consistency is achieved
- or simply just squeeze a lemon over the top
Instructions
- wash and slice/chop all ingredients and place into a bowl!
- FOR THE COOKED OPTION:
- wash and slice everything, place the salad and cucumber in a bowl or on a plate together.
- place the corn, tomato and mushrooms on a skillet with the tamari, pepper and onion powder and cook for about 5 minutes until slightly cooked!
- add the sauteed mix to the top of the salad!
Notes
the dressing option just gets mixed in a bowl, mix the tahini and lime first then add the water until desired consistency is achieved... the texture will get separated at first but keep stirring and it will turn into a creamy texture!
