Gimme some crunch and chocolate and chewy sweet-ness! Yep, that's this granola explained in a nutshell!
I have a thing for snacking... Like I need my snacks! I bring snacks with me everywhere, so making my own healthy granola is essential! It's healthy, I know exactly what's in it, and it tastes ah-mazing!
This particular batch has a little cinnamon and all spice added cause why not? Tis the season right? 😉 plus the smell of cinnamon in your house is the best, I'll use any excuse to bake something with cinnamon this time of year! Aren't you the same way?
So for nuts I added almond and walnuts but you could really add which ever nuts your prefer.
It's worth noting though, I use plain unsalted unroasted nuts and that's generally what I use in my granola because I find that the ones that are already roasted and salted tend to give off a burned smell when you bake them... Not sure if it's just me? Or I over-bake them? I don't know, so just use the plain ol' regular nuts please! 😉
Moving on, this stuff is so addicting Nick loves when I make granola or granola bars and always brings them to work! He's kinda a snacking person too!

Healthy Dark Chocolate Cherry Cinnamon Granola

Ingredients
- Dry:
- 2 â…“ cup rolled oats (gf certified if necessary)
- ½ cup almonds plain unsalted unroasted (roughly chopped)
- ½ cup walnuts also plain (roughly chopped)
- 1 tsp cinnamon
- â…“ tsp all spice
- Pinch of sea salt
- 1 cup dried cherries
- 3-4 oz. dark chocolate (I used a bar and chopped it up into small chunks)
- â…“ cup unsweetened coconut flakes
- Wet:
- â…“ cup melted coconut oil
- ¼ cup maple syrup
- 1 tsp vanilla
Instructions
- Pre-heat the oven at 350
- In a large mixing bowl add your coconut oil first and microwave it for 20-30 seconds until melted, then add your maple syrup and vanilla and mix together.
- Then add your oats, cinnamon, all spice, salt and roughly chope your almonds and walnuts and add them, mix well.
- Spray a baking sheet with non-stick spray (ones with edges so nothing falls over board) and pour the mixture on the sheet and spread evenly.
- Place in the oven for 23 minutes total but taking it out half way through and stirring the mixture up.
- Let the granola cool for at least 30 minutes or until completely cool so the chocolate doesn't melt, then roughly chop your chocolate and add that to the mixture as well as your dried cherries and coconut flakes!
- Mix together and eat plain as a snack or with some almond milk for breakfast!
- Store in air tight contain (like a mason jar or something comparable) for up to 2 weeks.
