SO! This simple “recipe” is perfect for those of you who are indulging in all the sweet-ness right now OR for those of you who are already thinking about your new years resolution to eat healthier!
You are going to love how easy and healthy these 2 Ingredient Fudge Balls are!
Basically to make these little pieces of chocolate delicious-ness you put the pitted medjool dates in a food processor with the cocoa (cacao/carob) powder and pulse until broken up and blend until soft a creamy smooth!
Roll them into balls or you can even put the mixture in a small dish (lined with parchment paper) and spread it out evenly and once they are set you can cut them into small squares!
If you would like to flavor them (I love peppermint) you can use either peppermint, strawberry or raspberry extract (or a stevia flavor sweetener) but you want to make sure you don’t add too much!!! it’s very important that you only add like 1 tiny drop about 1/16th of a tsp.
Another option is to add some walnuts or other nuts in here and pulse a few times until broken up, if you like to have a little texture in your chocolate! Ingredients
- 1 cup packed pitted medjool dates (about 10-12 dates, soak in water first if they are dry and not soft and gooey)
- 4 TBSP cocoa powder plus more for rolling in (cacao or carob will also work)
- OPTIONAL FLAVORINGS:
- 1 tiny drop about 1/16 tsp of peppermint extract OR strawberry extract OR raspberry extract
- can add in walnuts if desired for a textured fudge.
Instructions
- Place dates and cocoa powder in a food processor and pulse a few times and then blend until smooth! (add in at the very beginning if you are adding any in, my favorite is 1 drop of peppermint!)
- Remove blades and roll into balls, roll each ball in cocoa powder and store in a container in the fridge for up to 1 week!
- can eat right away or let set in fridge and it will get more firm
- makes 8-10 balls (can also flatten and cut into squares instead if desired
