So light and refreshing, so healthy and so very yummy!
the cucumber, tomatoes and green onions came from our garden you can see pictures of our garden here!
this is perfect for a snack or lunch to bring to work or school...
layer it all into a container and bring a separate container with your dressing with... a mason jar works really great to layer this in because you can shake it up after you put the dressing on it and eat it directly from the jar! I love mason jars I use them for like ev-er-y-thang! (not literally but I use them A LOT)
p.s. if you put it in a mason jar only fill it ¾ of the way full so that when you shake the dressing up it has room to mix all together and get all the yummy dressing all over it!
this is Nick's recipe although I won't lie... he puts like twice the amount of dressing on it! he likes to drown his veggies in dressing lol... but o well it's still half healthy 🙂

Healthy Garden Veggie Salad

Ingredients
- - ⅔ cup of shredded carrots
- - 1 whole de-seeded cucumber
- - 12 cherry tomatoes
- - 7 stems of green onions
Instructions
- put the carrots on the plate first
- cut the cucumber into small pieces and de-seed them (unless you like the seeds them leave them in) and layer those on top of the carrots
- slice the tomatos in half and layer those on the cucumbers
- chop the green onions and sprinkle them on the top
- Optional:
- dressing of your choice, in the picture i used Ranch dressing but a more healier vegan gluten free option would be lemon juice or a little bit of olive oil with salt and pepper
