this Healthy Garden Veggie Wrap  is SUPER quick and easy to prepare! no fuss and the perfect fast lunch!Â
so in case ya haven't noticed, I like my food simple! when it comes to baking things get a lil more complex but food... simple-clean-fresh is what I go for 99% of the time! anyone else with me on that? 😉
speaking of fresh! our garden ...that I have been meaning to post some pictures of! (I'll put that on my list for this weekend!) 😉  has been growing lettuce faster than we can eat it! ... it's very possible that we seen these nice little lettuce plants at Home Depot and maybe bought a few too many not knowing how big and fast they grow!
our green onions/scallions are doing amazing too! but our peppers, tomatoes and ALL the other plants aren't producing... YET! but when they do, watch out because the Salsa addiction is stronggg! I mean I gotta share at least 1 or 2 new salsa/chip dip recipes with you this summer because who doesn't love salsa!
anyways, moving on to this Healthy Garden Veggie Wrap! I put it on a GF tortilla (trick with those is to warm them up before serving+eat right away otherwise they tend to be a little tough!) next I layered on some roasted red pepper hummus, you can use any flavor you like but I think that the roasted red pepper flavor gives it a really nice kick of flavor!
then I layered on lettuce a couple pieces from our garden and a few pieces from a spring mix package containing a few other lettuce flavors!
and then I piled on the veggies and "technically fruits" tomatoes red and yellow, cucumbers, avocado, and scallions from our garden! so much fresh flavor in this wrap that you aren't even going to notice that your basically eating a SALAD wrapped in a tortilla! 😉

Ingredients
- 1 Gluten Free tortilla (I used Food for Life brand)
- 1-2 tablespoon roasted red pepper hummus
- spring mix salad
- chopped cucumber
- ¼ of a sliced avocado
- 2 stems of green onions/scallions
- 1 slice of a red tomato
- 1 slice of a yellow tomato
Instructions
- start by warming your tortilla in a pan just until it softens about 30-60 seconds on each side
- start layering your toppings, hummus first to hold everything in, then lettuce, cucumber, avocado, tomatoe's and scallions!
- fold your wrap together (folding one end in so it doesn't fall out!)
