So we are getting a little healthy today!
I love mixed veggies SO much you guys! and this is probably one of my favorite combo's by far! Zucchini, Squash and Green Beans are like my go-to veggies when I just want some healthy but FILLING veggies.
I love eating these by themselves but I also love to have them as a side dish to rice or pasta 😉 (yeah cause I love my white carbs so much, but you could use brown whole grain too!)
In this dish I also added some walnuts for some omega vitamins plus it adds texture and crunch to this dish!
I don't know about you all but I really like to add nuts to my veggies it makes it feel more like a meal (if your eating it as a meal instead of side dish) it is more satisfying and makes me more likely to eat this as a healthy lunch!
now I sauteed these in a frying pan because I like my veggies cooked, there aren't very many vegetables I will eat un-cooked! the few that I will would be... carrots dipped in hummus (but I loved cooked ones too!) do tomato's count as a vegetable since most people think they are? I know they are a fruit but I don't know that's a toss up  😉
what about you guys? what veggies will you eat un-cooked ? do you eat them plain or do you dip them in something like dressing or hummus?

Healthy Mixed Veggies Vegan GF Soy Free
- Prep Time: 10 mins
- Cook Time: 15 mins
- Total Time: 25 mins
- Yield: 6 1x
Ingredients
- 3 cups chopped green beans
- 2 zucchini
- 2 yellow summer squash
- 3-4 tablespoon olive oil
- salt/pepper to taste
- onion powder
- garlic powder
- ½ cup chopped walnuts
Instructions
- in a large pan/skillet spray it with non-stick cooking spray
- chop all your veggies, green beans, zucchini, and squash and add them to the pan
- let them fry for about 8 minutes on almost high heat
- then turn heat down to medium and add your salt/pepper, onion powder, garlic powder and let fry for the additional 7 minutes or until soft
- then add your olive oil and just let it get warm and then turn the heat off, don't cook the oil too much!
- while that's in the pan chop your walnuts very small
- add walnuts
- plate and serve
- (this recipe mates 3 large meal servings OR 6 small side servings

These mixed veggies sound fantastic, Michele! I love making vegetables, but I've never thought to make mixed ones. I love this recipe! And such a great idea to add in some nuts for protein and crunchiness. Sounds like this is very versatile, too! What a great dish!
