This Healthy Mushroom Spinach Pasta is super easy! Only 6 ingredients, packed with flavor, and a great lunch or dinner! and Vegan!Â
Pasta, pasta, pasta!!! It's my all time favorite! 😉 I won't even admit to you how many nights per week I eat it! I swear I have some Italian in me or something... Hahaha!
And lately, it's been pasta and Halloween Town movies... Ya know, the ones from Disney channel! It might be lame in some people's eyes (come on I'm not judging YOU!) but those are my favorite Halloween movies! 😉 well that and Twitches!!!
Anywayssss... this is super dooper simple, I mean most everything I make is simple because what can I say, I'm a simple girl!
INGREDIENTS!!!
This pasta has mushrooms and onions for that bang of flavor, butter of course because it just goes with pasta right? I did use a little bit of olive oil over the pasta though 😉 but I couldn't leave out that salty butter taste on my pasta 😉 Mmm hmmmmm!
And then for some super healthy pop-eye nutrients I tossed it with some spinach but i made sure I poured the hot pasta in top the spinach so it would cook it slightly and soften it so I didn't have to cook the spinach down, it softened just enough with the hot pasta!
So if your in the mood for a quick dinner packed full of flavor and fresh ingredients then THIS Healthy Mushrooms Spinach Pasta is what your looking for!
p.s. I always say salt/pepper to taste because I personally don't use very much salt but I know for some people it might be too bland, I literally use a pinch! so please taste it and spice accordingly 😉 also I have used extra onion powder on here and it's totally YUM!

Healthy Mushroom Spinach Pasta
Healthy Mushroom Spinach Pasta

Ingredients
- (16 oz./1 LB./ 1 box) of bow tie pasta
- 3-4 cups of spinach
- 8oz (about 1-½ cups) of mushrooms
- 1 small white onion
- 3 tbsp vegan butter ( I used Earth Balance in the red tub)
- 2 TBSP olive oil
- Salt/Pepper to taste
- Green onions or scallions
Instructions
- Boil your water in a pan and cook pasta about 15 minutes for me
- While pasta is cooking rinse your spinach and place in a bowl
- In a skillet add your butter and chopped mushrooms and onion and let cook for about 10 minutes
- Once pasta is done, drain and pour over the spinach while it's hot so it will soften the spinach slightly and pour your olive oil over the pasta before it gets sticky (salt/pepper to taste)
- Pour your butter, mushroom, onion mixture over the top and mix everything up!
- Optional if it's to dry for you add a little more butter or olive oil
- top with scallion or green onions!
- Serve and enjoy
- About 6 servings
