I Can. Not. Stop. eating these Healthy Peanut Butter Pretzel Energy Bars!
For realz, I have made these twice this past week… they are just so easy to snack on!
SPOILER: the first time they were bars but the second time I actually rolled them into little energy balls and that was deeelicious! Except I think I may have eaten too many balls that way so I think I’ll stick with the bars because then they are already portioned! 😉
It’s already April whaaaat!? Can you believe it? I am SO ready to start planting our garden! I know it’s not time yet but I am seriously impatient! Those cherry tomatoes that we grow every year are so juicy and the homemade salsa! AHHHH I am SO craving chips and salsa now! I don’t know why I try to write posts late at night when I am hungry! 😉
Oh well, at least these Healthy Peanut Butter Pretzel Energy Bars are super easy to make and require no baking! AND even better I have a few little pieces left in the fridge right now! SNACK TIME!
Ok, so here’s the run down on these energy bars:
They are sweetened with medjool dates and maple syrup.
They only require your food processor to make and a couple measuring cups because you can mix the whole thing in your food processor!
They are sweet, ooey and gooey and completely yummy!
So you add the maple syrup, dates and peanut butter to the processor and blend until creamy and smooth and sticky!
Then you add the oats and peanuts and pulse until they are broken up, then you fold in the smashed pretzels and chocolate chips and that’s it!
It goes in a lined pan. TIP wet your hands a tiny bit before pushing the mixture flat, this will keep the mixture from sticking to your hands! 😉
It goes in the fridge for a couple hours to set before slicing, or in the freezer for 30 minutes to set then stored in the fridge!

Healthy Peanut Butter Pretzel Energy Bars made with peanut butter, oats, pretzels, and chocolate chips! Naturally sweetened with maple syrup and dates Vegan and Gluten free

Ingredients
- 2 cups oats
- 4 TBSP peanuts (I used dry roasted)
- ½ cup maple syrup
- ½ cup peanut butter (I use PB&Co. white chocolate kind)
- 10-12 pitted medjool dates (if they are smaller use 12 if they are bigger use 10)
- ⅔ cup vegan chocolate chips (I used Enjoy Life dark chocolate ones)
- ⅔ cup smashed pretzels (vegan friendly - make sure there is no honey in them and GF if necessary)
Instructions
- In a food processor add the pitted medjool dates, peanut butter and maple syrup and blend until smooth. (push sides down a few times if necessary)
- Add in the peanuts and the oats and pulse until broken up and forms a chunky but mixed consistency.
- Remove the blades from the food processor and add the chocolate chips and smashed pretzels and fold them in. (this is a thick and stick batter so do your best to fold them in)
- Line an 8X8 pan with wax or parchment paper and scoop the mixture into the pan, splash a little water on your hands (tiny amount) and begin pushing the bars down and flattening the mixture.
- Place in fridge for a couple hours to set or freezer for 30 minutes to set. Remove by pulling up the edges of the parchment paper and cut into bars! Cut them into whatever size bars you like. Store in the fridge until ready to eat or pack in lunch, wrap each one in wax or parchment paper for on the go!
- This mixture makes 8 large bars or 16 smaller square bars.
- This is a thick chewy and gooey bar.
Notes
If you only have a small or mini food processor, make only half the recipe by adding in half of what the recipe says… this recipe works well being split in half or even being doubled!
Also delicious rolled into little energy balls instead of bars.
