That was deeelicious BUT I had to make a new version and I am SO glad I did!
You are going to love this Healthy Vegan Blueberry French Toast because it is super simple to make, soft and moist and melt in your mouth delicious!
To make this French toast you basically just blend up bananas, blueberries, almond milk and a splash of vanilla and that’s your “egg wash”.
I use some vegan butter in a non-stick pan for frying the French toast. (It is a MUST to have a non-stick pan/skillet otherwise this could get scary!)
Then you just dip your bread into the “egg wash” and get to fryin these babies up! I used texas toast just because I love how soft it is, but you can use a gluten free variety if you would like. 😉
the type of toast you use (firmer of softer) will affect the density of the toast, because bananas hold a lot of moisture a soft toast will be very very soft almost soggy for lack of a better word but I actually like that ... BUT a firm toast (wheat or like a french bread) will be more sturdy... but with either one note that it will take longer for this french toast to cook than your average french toast with eggs just because bananas are much more moist!
Another thing! I mentioned this in the recipe notes as well, but blend together the bananas, vanilla and almond milk FIRST until smooth and then add the blueberries and pulse until broken up!
You do this because then you have those nice blueberry speckles in the toast and it just looks pretty! 😉
Also this is a blueberry flavor but it is not a strong one…if you want to enhance the blueberry flavor you could 1. Add more blueberries to the “egg wash”, 2. Add a pinch of vegan cane sugar to the blended mixture to bring out more sweet-ness, 3. Or use blueberry syrup, I used maple syrup but feel free to use whichever you like best!
And then you gotta top the French toast with more blueberries and a dash of cinnamon because it just makes it just that much more mouthwatering!

Healthy Vegan Blueberry Banana French Toast
This Healthy Vegan Blueberry Banana French Toast is soft, moist and delicious! Blueberries and Bananas come together perfectly in this vegan french toast!

Ingredients
- - 1- 2 ripe bananas (depending on size, 2 small or 1 large)
- - ½ cup fresh blueberries
- - 1 teaspoon vanilla
- - ¾ cup unsweetened vanilla almond milk (I use SILK brand)
- - Optional: a pinch of vegan cane sugar in the “egg wash”
- - 2-3 tablespoon vegan butter (I use Earth Balance in the red tub)
- - 6-8 slices of bread (I used texas toast but feel free to use whatever is your favorite)
- OPTIONAL TOPPINGS:
- Maple syrup
- Blueberry syrup
- Cinnamon
- More blueberries and bananas
Instructions
- Blend up the bananas, vanilla and almond milk (add sugar if you choose too) and blend until smooth.
- Add blueberries into the blended mixture and pulse until broken up.
- Pour the mixture into a large bowl for dipping.
- Put a little bit of butter in a skillet pan and let it heat up on high heat melting the butter.
- Dip your toast into the batter and place on the hot skillet. Cook 2-4 minutes on each side of the toast until brown, I cooked on high heat to get that browned layer but you can cook it on medium to high heat just be sure not to burn the toast!
- Plate and top with topping of your choice!
- Makes 6-8 slices of texas toast (gluten free verities are usually smaller so you might get more like 8-12 slices with this batter)
Notes
the sugar added to the "egg wash" is not necessary, I generally do not use it, it just adds a more sweet flavor to the french toast.

if you like your french toast really soft then dunk each piece of bread in the banana wash and place right on the skillet, if you like it more crisp on the edges then dunk the bread and run your fingers along each side to get off some of the excess so it's not such a thick layer of banana wash!
please note that this will not get as crispy as traditional French toast due to the fact we are using banana and not egg, but it can get a little bit of crips on the outside, though the center will remain soft.

Hi Michele, my husband dislikes bananas, do you think this Blueberry French Toast would work with applesauce or something else instead of the bananas?

unfortunately I haven't tried it with anything else except the bananas and I am not thinking that applesauce would work very well because it is much too runny... I'm going to attach a link below here, it is a different egg-less vegan french toast using almond milk and flour to thicken it... I have not actually tried this one that I am linking but it sounds like it would be a very good alternative if he doesn't like bananas! 😉 I hope that helps a little! have a wonderful day!
