These HEALTHY + VEGAN LUNCH IDEAS | QUINOA are super quick and easy to make, healthy, great for meal prepping and gluten free, and oil free!
Quinoa is such a great source of protein especially if you are vegan, it contains all of the essential amino acids and it's just literally a superfood! In this video I am showing you three of my favorite ways to prep and make quinoa meals in advance so I have healthy options available and ready to go in the fridge during the week when I am super busy! —-DETOX QUINOA BOWL—-
- ½ - 1 cup cooked quinoa (I used red)
- ¼ cup chopped red onion
- ¼ cup chopped red pepper
- ¼ cup chopped walnuts
- ½ ripe avocado chopped
DRESSING:
- juice from half a lemon or lime (about ½ TBSP)
- pinch of black pepper
- ⅛-1/4 teaspoon onion powder
- ½ tablespoon olive oil (OPTIONAL)
DIRECTIONS:
- cook quinoa, chop the rest of the ingredients (can meal prep all of this in advance except the avocado, add that the day you are planning to eat)
- mix dressing in a small bowl and pour over top, mix everything up and enjoy.

—-CURRY QUINOA—-
- ½ - 1 cup cooked quinoa + cooled
- SPICES ⅛ - ¼ teaspoon each depending on flavor desire:
- Curry, paprika, turmeric, cayenne, black pepper
SERVE WITH any veggies you like, I used:
- broccoli
- chopped red onion
- chopped mushrooms
- ½ a ripe mashed avocado on top optional
- Lemon slices optional
DIRECTIONS:
- cook quinoa in advance so it is cooled, add quinoa and spices to a skillet mix well, add in chopped veggies and sauté until fragrant.
- Serve everything together. OPTIONAL add mashed avocado and lemon slices on top if desired.
—-SUPERFOOD QUINOA BOWL—-
- ½ - 1 cup cooked quinoa (I used mixed color)
- ⅓ cup broccoli
- ¼ cup red onion
- ¼ cup chopped red pepper
- baby kale or spinach optional
DRESSING:
- half of a lemon or lime juiced (about 1-2 TBSP)
- pinch of black pepper
- ½ teaspoon mustard
- ⅛ teaspoon onion powder
- ½ tablespoon olive oil (OPTIONAL)
DIRECTIONS:
- cook quinoa, chop veggies and then either steam or sauté them whichever you like best.
- mix dressing in a separate bowl and pour over the top.
