Time to get your healthy on my friends!
this Healthy Veggie Salad  is going to make you look at salads in a whole new light!
your going to love the fried veggies mixed with the greens and walnuts!
it's Mondayyyy! alright that sounded like I'm excited about that... to tell ya the truth Monday's are NOT my favorite day,
correction the hardest day for me to get through just simply because it's the start of the week... but Saturdays on the other hand, THEY are my FAVORITE! ya know why? because it's our relax day, even though we aren't lazy on Saturday's we usually end up doing something but it's stress free! the "to-do" list is put on hold and it's time to spend together and enjoy life 😉
now I bet your asking what about Friday like TGIF and Sunday... well Friday your usually too exhausted from the week you just had and Sunday is prepping for the week to come so Saturday it is in my book...
what day would be considered your favorite day?!?!?!Â
now anyways, on to the Healthy Veggie Salad...
you know you probably ate way too much over the weekend, at least I usually do 😉
so I use Mondays as my "get back to regular eating" day
so in this Healthy Veggie Salad we have a bed of Lettuce I used Arugula but you can use what ever you like, and we have Zucchini and  yellow squash pan sauteed in some olive oil and spices ... the veggies give this salad a more filling meal-like feel, and then we topped it with some super healthy and slightly crunchy walnuts (but of course you could use almonds or seed of your choice) I like walnuts because of the omega-3's in them but all nuts have their own special nutritional benefits 😉
I hope you all try this or pack it for lunch one day this week, the trick to taking a salad like this to lunch is to pack the veggies separate from the lettuce and toss them together before you are ready to eat!

Healthy Veggie Salad Vegan GF Soy Free
- Prep Time: 10 mins
- Cook Time: 15 mins
- Total Time: 25 mins
- Yield: 1 1x
Ingredients
- 1 ½ cups of arugula (or leafy lettuce of your choice)
- ½ of a zucchini
- ½ of a yellow summer squash
- 1 TBSP olive oil
- salt/pepper to taste
- garlic powder to taste
- onion powder to taste
- ¼ cup chopped walnuts
Instructions
- spray a skillet pan with non-stick cooking spray
- chop your zucchini, squash and add to pan
- let simmer for about 8-10 minutes
- add olive oil, garlic powder, onion powder, salt, pepper to taste
- add your chopped walnuts and let continue to cook until the veggies are soft
- make a bed of leafy greens on a large plate
- add your veggies on top and top with a drizzled of more olive oil if desires
Notes
