No Bake Chocolate Almond Bars are super healthy and very easy to make only requiring 4 ingredients, dates, almond, oats and vegan chocolate chips! Vegan and Gluten Free!
Today I am showing you a new favorite snack of mine, it’s perfect for a quick pick me up of energy and it only requires 4 ingredients! I think you are going to love how easy it is!
It’s HOT outside right now so that means I’m not really wanting to turn the oven on right now, so that means no-bake goodies! You know I love no bake treats especially healthy ones like Rawnola and these healthy chocolate peanut butter cups! But today is all about the healthy nutty flavored almonds!
These are super simple all you need is medjool dates, oats and almonds... I used the roasted and lightly salted kind but you can also use raw ones if you would like! Also vegan chocolate chips which are optional, yes of course they make it taste more like a candy bar but I’m totally not joking when I say it tastes amazing even without the chocolate layer on top.
All you need is a mini food processor or high speed blender to blend it all up. The mixture will get loose and crumbly before it gets sticky and clumpy like it should be in order to press it flat into a dish, so make sure you keep processing through the loose texture until it forms a sticky clumpy texture!
I cut mine into square bar pieces but you could totally cut them into candy bar long thin slices or even smaller bite sized pieces. If you feel like getting supa' fancy pants you could even roll this into balls and dip them in the chocolate!!! Y-U-M!
Also, I don’t know how it’s possible to not like the roast-y flavor of almonds but… if you don’t, you can definitely swap them for any other nut you like just use the same quantity as listed in the recipe.
These no bake bars are also really great for a grab n' go snack to pop in your purse or lunch if you don’t put the chocolate on top. You can put one in your purse or lunch box and it should stay fresh all day. This recipe doubles really well if you want to make a double batch. They also store really well in the freezer for 3-4 weeks or 1 week in the fridge!

No Bake Chocolate Almond Bars are super healthy and very easy to make only requiring 4 ingredients, dates, almond, oats and vegan chocolate chips! Vegan and Gluten Free!

Ingredients
- - 8 pitted medjool dates (about ¾ cup)
- - ¾ cup oats
- - ½ cup almonds (I used roasted/salted)
- - ⅓ cup melted vegan chocolate chips
Instructions
- In a food processor blend together the date, oats and almonds until it forms a sticky dough, this will take about 3-5 minutes and you may need to push sides down several times. It will turn into a loose crumbly mixture before it turns into a sticky dough so keep processing until it turns to a sticky dough.
- Line a 4X6 dish with parchment paper (or a small dish if you want thicker bars) and dump the sticky mixture in the dish, using your hands push the mixture flat into the dish. Place in the freezer for about 10 minutes.
- Melt the chocolate chips, remove the bottom layer from the freezer, pour the melted chocolate over the top and spread evenly. Place back in the freezer for 3 minutes ONLY! Remove and life up on the parchment paper pulling it out of the dish, slice into squares and them place back in the freezer or fridge until ready to enjoy! The reason you freeze for 3 minutes and then cut them is because if the chocolate gets too solid it will crack when you cut into it.
- Store in the freezer up to 3-4 weeks or in the fridge for 1 week
- Makes 6-12 bars depending on the size you cut them!
