This is so quick and easy to make, it's rich in PB and it's a rockin dessert but also healthy enough to have for breakfast, if you like a breakfast that tastes like dessert!... who wouldn't love that 😉

So hopefully you all had a great weekend! We spent a lot of time outside enjoying the summer that is wayyy to quickly coming to an end...I wish it could be summer all year round! We also did a bunch of cleaning out the garages re-organizing things... not always the funnest but totally necessary.
Anyways back to these bars... they are defiantly for your sweet tooth and for those of you that love Peanut Butter and Chocolate together... (ME, ME, ME)

No Bake PB Oat Nut Bars Vegan Gluten Free
No Bake PB Oat Nut Bars Vegan Gluten Free

Ingredients
- - ¼ cup Packed Brown Sugar
- - ¼ cup sugar (natural cane sugar if you want it Vegan)
- - ½ cup all natural Peanut Butter
- - ¾ cup Brown Rice Syrup
- - 2 tablespoon Maple Syrup
- - 1 ½ cups Chocolate Rice Crisps (gluten free)
- - ¾ cups Rolled Oats
- - ¼ peanuts (chopped)
- - ½ cup of chocolate chips
- Optional:
- Chocolate Drizzle Topping
- - ½ cup of melted Vegan or Dark chocolate chips
Instructions
- in a pan add the brown sugar, sugar, brown rice syrup and stire on low heat until combined.
- add Peanut Butter and maple syrup, mix well
- add in chocolate rice crisps, oats, and peanuts (or other nuts of your choice) mix well for about 1-2 minutes
- spray you pan with non-stick cooking spray
- pour the mixture into a pan (i used a 9x9 inch pan)
- let sit overnight to set OR place in fridge for 1 hr
- Optional Drizzle Topping:
- in a microwave safe bowl put the chocolate chips and melt them for about 1 minute (all depends on your microwave)
- drizzle you chocolate topping using a small spoon OR if you want to get a little fancy you can use either a pastry bag or plastic sandwhich bag with the tip snipped off to drizzle your chocolate.
- *Store in the fridge

this recipes makes 9 large bars or 18 smaller bars, depending on what size you like them!
P.S. if you love No-Bake bar you might want to try these No Bake Chocolate Oat Nut Bars they are just as yummy as these ones but with almonds and a little bit saltier!

These bars look amazing, Michele! I love the fact that they're gluten-free! I just made my own peanut butter granola bars a few weeks ago, but I love your version. I've never tried brown rice syrup before, so I will have to check that out. And I would definitely require a good amount of chocolate drizzle on my bars! 🙂

Thanks Gayle! and yeah you should check out brown rice syrup... I like to use it in a lot of my no-bake bars like this one... I know that people use it in their baking as well but I have not tried that yet... and I totally agree about the chocolate, I may have eaten the chocolate smothered one first 😉 lol
